First Post of the New Year

2011 is off to a productive start.  Probably because last night I gave the husband his 5-4-3-2-1-midnight! kiss and then headed straight to bed.  It’s not an official resolution, but bedtime is going to be a focus of mine in 2011.

Healthy breakfasts are also going to be a focus, but that was kind of a flop today.  To be fair, I just got back from a 10day vacation, so the choice was candy or nothing.  (I went with nothing).

Instead I unpacked, put away all the Christmas decorations, organized my new day planner, and wrote up a grocery list and meal plan.  The husband and I also got in our first workout:  20minutes of strength and stretch moves, side by side on our yoga mats.

Next up was a trip to Wegmans to deal with the food situation. It was 50*(?!?) here today, so this was my entire outfit, no coat!

It was after noon by the time we got to the grocery, so we had a lunch date at the hot bar.

I got Brussels sprouts with honey walnuts, white beans and escarole, Asian style veggies,

and a single piece of sweet and sour chicken.

I looooove it, but more than a bite really is overkill/unhealthy.

After a quick trip home to drop off the groceries, we headed to date #2 – the movies.  We were both dying to see “The Black Swan” and were crushed when we thought it wasn’t going to come to Buffalo.  As soon as we saw the updated movie listing on Thursday we knew what our plans for the new year were.

While at the mall I took advantage of post-holiday sales and snagged some bras and hand soap, both of which were boring but necessary. We also checked out the new candy kiosk.

A quarter pound of sour gummi cola bottles makes for a very exciting movie snack.

During a very exciting movie! The Black Swan was gorgeous, and very tense. I realized during that credits that I was clenching my hands so hard I hurt my finger!

Our dinner plan was an easy peasy three ingredients.

Pasta, marinara, canned sardines.

The husband is obsessed with sardines but I’ve been too afraid until now to try them. The smell is less than appetizing, but fish – omega-3 – is so healthy for you and this is the only kind of seafood we can afford.

I had the husband deal with them – mash, pan fry with marinara sauce – until it was time to top the pasta.

Looks good, great idea, but ultimately not for me.  I ate about half of my plate but was gagging and putting on major theatrics the whole time.  It didn’t help matters that Adam way undercooked the pasta, perhaps I’ll try again another time.

Thank goodness we had a spinach side salad planned.

Topped with Newman’s Own Asian Sesame dressing and Sahale Snacks Valdosta pecans.

And thank goodness for popcorn!

Highjinks Highlights

Turkey Day #2 was a success!  This is our last night of family time so I’m going to keep this picture-heavy and words-light.  For accountability’s sake – do be aware that I ate a TON more food than I managed to photograph, I’m just showing the highlights.

When I woke up this morning I looked over to the cutest sight on earth – the husband was holding baby niece on one side and had 5-year-old niece cuddled up on his other side!  #myovarieshurt

Before the gluttony began, Adam and I started the morning with a run.  We did a quick 1.5miles.  I was very glad to get some movement into my day.

Now the food (again, just the highlights).  0% Honey Chobani.

Our contribution #1 was deviled eggs.

I enjoyed one with some *delicious* cocktail shrimp.

Contribution #2 was this Poinsettia Popcorn Tin.

1-800-Flowers.com sent me this to review and I decided to share the wealth with the in-laws.  Butter, cheese, and caramel.

Oh.my.god.  You can assume I had many many handfuls.  Everyone agreed this was delicious, great for the holidays.

My dinner plate – white meat turkey topped with cranberry sauce, stuffing, sweet potato casserole, and veggies with dip.

My dessert plate – chocolate cake and crock pot cake (a beyond amazing recipe which I will be making on my own and sharing soon).

Life As I Know It

It’s been a rather fun day, especially for a Thursday!  We’ve managed to pack in a lot of good times.  Plus, look at the sun rise I woke up to today:

Not quite as impressive foodwise; I’m not sure how I managed to get so completely out of food!  We actually made a special banana stop this evening so I could make myself oatmeal (a real breakfast) tomorrow!

I did the best I could with breakfast today though.

I knew I didn’t have time for lunch between classes so I tried to make a bowl that would hold me over for the long run.  0% Plain Oikos, maple syrup, homemade pb, peanuts, shredded coconut, and craisins.

Filling, and actually a very tasty combo of flavors.

I got some good news in Anatomy, an A+ on last week’s practical exam!  And in between classes I finished all of my work for tomorrow, which meant I had time to play later on.

Food lab today was all about veggies.  My group experimented with the effects of cooking techniques.  Did you know – if you want your broccoli to look extra green and appetizing you should use cooking water that’s a bit alkali (baking soda).  If you cook it in an acidic medium (with vinegar) you’ll end up with a very unappetizing olive-green shade.  I didn’t sample any of our experiments, but I did take some tastes of the dishes the other groups made.

Adam came to pick me up from school because of the rain, and we took a spontaneous trip to the movies!  You know we split a medium popcorn 😉

We saw “Life as You Know it,” which I’ve been jazzed about for months.  Normally I hate chick flicks but something about Katherine Hiegel makes me unable to resist!  The movie was adorable, very touching but with a lot of funny moments as well.  I give it two thumbs up!

Our apartment is seriously foodless, so when we picked up my banana we also swung by Moe’s for a quesadilla.

I ate my fair share of chips too.

And a honey vanilla caramel apple.

Now we are watching “Nightmare Before Christmas.”  Adam’s been trying to get me to see if for years and I’m actually totally loving it.  Hope you all have *sweet* dreams!

My Achy Breaky Head

Ugh.  I had a strange, achy/heavy head feeling all day; which I’m sure was made worse by my crappy food choices.  I didn’t work out.  I’m not ready for any of my tests; probably because I didn’t study enough.  Ughs all around.

It’s All About Your Perception

This morning there was an issue with the alarms – Adam actually slept through his first class! – so the big breakfast I had planned couldn’t happen.  We were in such a rush leaving the house it was not until I sat down in the car that I realized I hadn’t washed my face, brushed my teeth, or put on make-up!!!  Thank goodness I managed to grab this PB Cookie Lara Bar for breakfast.

When I got to Anatomy Lab it seemed like bad-news-bombs were just dropping all over the place –

  • we have a homework assignment, and my group’s is due even though the apparatus we were given was broken
  • I only scored a 75% on last week’s quiz
  • we now have a quiz next week (that brings my quiz/exam total for next week up to 5!)

But you know what?  My morning was better than their’s –

It’s all about perception; when things seem bad you’ve got to put them into perspective before you get upset.  By the way – yes, we did a frog lab; yes, it was awful.  I wasn’t bothered by the cats at all but Mr. Hops made me pretty sad.

In my break between labs I did some Orgo reading and ate lunch.  Plums (why did I buy so many of these?!),

and another turkey/Laughing Cow/Sandwich Thin.

Today’s Food Lab experiment was fat cookery.  My group had to prepare deep-fried Pakoda (Indian-style veggie tempura), pan-fried catfish, and fried bread (to experiment with the effects of the quality of the cooking oil).  The small room got pretty crazy with five groups frying, the smell was out of control!  I had to take three (small) bites of fried bread so I could write up my lab report and it was pretty nauseating.  I just took a tiny plate of food at the end.

Next week we are doing fruit, and I am much more excited to sample then!

I actually felt pretty sick just from that small amount of fried food, but I knew that the gym would make me feel better.  30minutes on the elliptical, random, level 6.  I kept my workout short because I was feeling awkward about just how bad I smelled!  My hair and skin are like smell sponges; when I worked at Cold Stone in high school the smell of waffle cones would waft off of me for days!

I took a shower as soon as I walked home (and scrubbed and scrubbed and scrubbed!).  Then Adam and I took a quick fountain diet soda walk and got started on dinner.  I was actually so hungry after our walk that I ate this mini bag of kettle korn while we cooked.

Dinner was three simple steps.  Prepare some quinoa.

Pan-steam eggplant and spinach.

Make a quick curry sauce out of 0% Plain Stonyfield, curry powder, garlic powder, onion powder, and brown sugar.

Serve and consume.

Adam thought this was going to be gross and he ended up pleasantly surprised, and I thought it would be wonderful and ended up underwhelmed.  It’s all about perception!

Weekend Ends

Pretty much my only accomplishment today was eating so much junk that I put myself in a food coma.  Good thing I’m not officially a dietetics student until tomorrow, huh?

Super Saturday > Fail Friday

Today has been one of those perfect days where Buffalo felt like a fabulous place to live and all was right with the world!  It didn’t exactly have the smoothest start though, our fail dinner was like the gift that kept on giving (and giving and giving).  I don’t want to fully blame Wine Thief, because I did help myself to way too many of the husband’s salt and vinegar chips, but I spent my midnight throwing up and cursing date night.  Thankfully my super Saturday has all but canceled out fail Friday to restore the balance.  90% of the day has been walking, so that’s pretty much my perfect day right there 🙂

We started our morning with a mega-tour of my new campus.  I start class on Monday so I needed to figure out exactly how long it would take me to walk to school (~35minutes) and where all my classes were located.  Adam and I had a fun time exploring my new digs.

From there I walked over to the Elmwood Art Festival.  Is there anything more wonderful than a good street festival?  I think not.

After taking in the sites, I also took in some tasty treats.  Fresh squeezed maple lemonade.

Peanut butter popsicle dipped in dark chocolate.

Plus a new cereal bowl that I’m sooooo excited about (I’ll show it off later).  I actually went home for a spell and then came back with the husband.  On our final loop I picked up some kettle corn,

which was the perfect snack for my next activity – the movies!  The husband had to go to the lab so I decided to go solo to “The Switch.”  We are big movie talkers so I packed plenty of snacks to keep myself occupied alone.  A smaller portion of my fair kettle corn.

I probably could have eaten the whole thing, but I definitely didn’t need too!  What’s in the cooler?

A Ginger Root Beer Zevia sample,

and some frozen lemonade.

My kettle corn was sweet and crunchy, my lemonade tasted like summer, and my Zevia had a great kick – it was the perfect movie meal!  The movie was a win itself; Aniston and Bateman were the perfect foil and the plot was sweet and funny.  Eating Chalk recommends it!

Now I’ve got to get going on dinner.

I Envy No Man

It’s almost Friday!  Weekends have been pretty much meaningless to me this past unemployed year, but now that I’m starting back to school next Monday they are exciting again.

I spent forever running errands today because parking was ridiculous everywhere I went.  Also helping orphans catching up on “Make it or Break it.”  I managed to make time for some amazing meals though; I’m seriously excited about every single thing I ate today.

Frozen meal win, this was delicious.  A chicken enchilada with cheesy sauce,

and a pile of rice that got mushed around in the cheese sauce.

With an Orange Zevia (free sample).

I’m usually not one for orange sodas but this guy was totally thirst quenching.

Also, a mini bag of kettle corn.

I spent some time wifing it up in the kitchen, baking some chocolate chip cookies for the husband.  I stole a tiny one.

I would have eaten more, but I had already stashed 2T of dough away into the freezer for something amazing.  Keep reading…

Dinner was kinda off the hook.

Think tasty leftovers x10billion.  I topped a bed of roasted green beans with 1cup of corn, a serving of shredded bbq chicken, and some homemade bbq sauce.

Shredded chicken, corn, and roasted green beans are all pretty big favorites of mine and together they were unstoppable!  The balance of spicy-salty-sweet was perfect here.

But nothing was topping dessert.

I’ve had food-processor-envy all year, but tonight I envied no man; tonight, I got to make Gena’s famous banana soft-serve!

Only my batch was extra fabulous because it also had frozen cookie dough blended in.

This bowl was 2frozen bananas and 2.5T frozen cookie dough.  Swoon!
