Sandwiches, Smoothies, and Schedules

Hello again, happy Monday!  This will definitely be the longest recap post I’ve done in a while – Friday through Monday.  Physically things have been low-key but mentally there’s been lots of drama – my flight was canceled!  And since I’m in St. Thomas it could have meant getting into Buffalo on Tuesday and not having a ride and missing class.  I was freaking out a bit.  Thankfully 45minutes on the phone + my firm but calm voice got me on a different flight that leaves/gets in on pretty much the same schedule.  And now my layover is shorter and in Philly and not Charlotte.  🙂

I’m a big proponent of the firm but calm voice.  I was polite, and said multiple please and thank yous, but unwavering.  I didn’t ask whether or not I could get on another flight, I simply said “I will be leaving St. Thomas tomorrow, what can you do to help me make that happen?”  And it worked.

Anyway, back to Friday.  My mom served me a slice of cake,

which promptly got stripped of it’s icing because I don’t eat cake.

Then I moved on to greens, a small container I put together at the salad bar we stopped by.

Lettuce, beans, corn, cheese, 1 hard-boiled egg and a drizzle of light Cesar.

I also made myself some frozen coffee – coffee, ice, skim milk, and 2T sugar.

Soo much better than Starbucks could ever do.

Dinner was all about the leftovers.

Oven baked okra is kind of my favorite.

And I served up some leftover baked tofu on toasted rye with hot pepper raspberry preserves and sharp cheddar.

Friday night I did end up going out to meet some friends.  We had a good time and I had a few drinks but photo-taking was abandoned in favor of trying to keep my balance on one leg!  I don’t know how on earth I managed to stand on one leg past 2am but a fun time was had by all.

For Saturday morning breakfast my mom and I hit up one of my favorite places on earth – Barefoot Buddha.  I had fresh-made lemonade,

and a Bigfoot Bagel Sandwich.

Frittata, smoked turkey, turkey bacon, cream cheese, spicy sauce…

I love these sandwiches so much I ate them on my wedding day!  I know most brides say they are too nervous to eat but I was just nervous my friends would devour them before I got any 😀

We hung out and studied for a bit and I had a passionfruit, banana, coconut smoothie.

We laid low the rest of the day before going out to a fabulous dinner at The Cellar.  We did a lot of sharing and the lighting was low so let me apologize for the picture quality in advance.

There were way too many things I wanted off the drink menu but I finally settled on the Caribbean Champagne.

Champagne with coconut rum and key lime juice.  GREAT combination.

We split a cheese plate that was kind of out of this world.  The goat cheese was my favorite but the stewed plums were pretty fantastic as well.

For my meal I got the Vegetable Cutlet – panfried, potatoes, peas, carrots, eggplant and pickled papaya, and tiki masala sauce.

The cutlets were delicious but my favorite part of the entire meal was the eggplant wrapped papaya.  I ate one cutlet and took the other home, and I had a few bites of my dad’s tamarind mahi as well.

We were stuffed, but couldn’t not order a dessert plate to share.  It came with little forks,

because we got four little desserts!

Yum, yum, yum; I wished I could have had a BIG serving of the bananas foster.

Sunday morning I made a nice green monster for breakfast.

My mom and I got our nails done (green again, I’ll show you later!) and then I picked up nachos for lunch from the bar I used to work at.

Yum, but I think it’s time to be fully done with any sort of nachos for a while.

We saw a matinée of “Our Family Wedding,” during which I munched on a box of Nerds.

I would like to show you dinner but it was so dark at our table I never could get a picture.  I shared green bean fries with my parents and ate half of a tamarind turkey burger.

When I got home I had 2 maple pecan sticky blondies for dessert.

Dreena would be sad to know I deveganized these, but at least I made the recipe for my parents!

This morning (Monday) I’m hanging out at school for a bit before I head home to pack.  I brought a pineapple Chiobani for breakfast,

but that didn’t begin to cut it.

I ended up also having an egg and cheese biscuit from Wendy’s.

It is 100% time to stop eating like I’m on vacation!  Especially because I’m not sure what the workout situation with my leg is going to be like.

I had fabulous spring break but I am more than ready to get back with the husband and back on a schedule.  I get in late tonight so I won’t be posting today’s eats but hopefully Tuesday my sleeping, eating, and blogging will all be back on track!  I can tell you now though, that I have a Greek Gods honey yogurt in the freezer for a pre-packing treat!

When you get to the end of a vacation are you sad it’s over or ready to get back to business?

The One Where Emily Whines (and Questions)

It’s been a short while since my last post, but let me tell you it has felt loooooong!  I’d like start this post by saying I love my husband and I’m so happy I got to see him.  The half was fabulous and I loved getting to run in it.  I love my family and I’m excited to be home.  And now I’m going to complain.  I’m also going to survey (in bold) just for funsies.

Tuesday, Kristen came home from school and took me to the airport.  We stopped to get my tattoo touched up on the way; pictures are coming, I promise!  I didn’t get to the airport late, but I definitely got there later than usual, I like a good 2hour buffer.  How early do you like to get to the airport?  My leg was killing me and I ripped the bandage off my tattoo picking up my bag so I was a mess about two minutes in.  Thankfully they let me skip to the front of most of the lines, Jet Blue lets you check 1 bag for free, and I had a nonstop flight.

Jet Blue has free cable onboard, something we don’t have at home, so my 3 hours went by pretty quickly.  I snacked on a package of Teather snacks; yum.

A Muscle Milk Light Bar; meh, too gooey and with a strange aftertaste.

And a little bag of blue chips; blue for Jet Blue, cute and tasty.

I want to say the flight was good, I mean I had chips and “Bones” was on, how could it not be?  Oh yeah, when people who have no business being parents take their little monsters in public!  Before people try to crucify me – I was a teacher for two years, not only do I recognize the signs of most disabilities/disorders, I fully sympathize with the parents who help their children live with them.  This little brat was NOT disabled.  Nor was he that little, the child was at least 6 or 7.  Infants scream on planes, it sucks for their parents and the people around them, but if it happens it is unavoidable.  I’m not going to say this kid needed to be smacked (I don’t believe in that) but his parents certainly needed a smack in the face.  He screamed the entire flight.  Ok, whatever.  But he also kicked the back of my seat the entire flight.  And every single kick felt like someone was shooting me in the leg.  By the time I got off the flight I was in tears.

I dragged myself down to baggage claim holding back tears.  And I even made it to the car and managed to look happy to see the husband.  I probably would have made it all the way home without crying, if we hadn’t been a block from our house before I realized that I left my camera on the plane.  Oh man.  Thank goodness the woman at the Jet Blue was a freaking angel who found my camera, gave us her personal cell phone number, and then met us outside the airport after we drove back.

Adam got dinner during the whole rigmarole and I ate some of his tortilla chips but have no photographs, obviously.  Ever left anything behind at the airport?

We got home around 10 and had to unpack then repack before we headed back to the airport at 3am.  Fun times.  My leg has been getting worse as the days go on so Wednesday I finally sucked up the embarrassment and asked for a wheel chair at the airport.  I am just too slow to make it from gate to gate in time.  Fully humiliated, at least I made it to my flight.

I had a three hour layover in Philly, for which a motorized cart dropped me off at my gate.  Have you ever ridden on one of the airport carts?  There were no healthy breakfast choices close by so I went straight to lunch at 8am.

as well as this side of Waldorf salad.

I also made it to a newstand and had a York Peppermint Patty for dessert.

The husband said I needed to suck it up and go to the ER but as my 2nd flight got more and more delayed that option slipped away.  The flight from Philly to STT was 4hours long (and 2hours late) so by the time we got into the air I was starving again.  I bought a snack box on the plane but was a little disappointed with the unhealthy choices.

I ended up eating the cheese and crackers.

And the mixed nuts.

If you can’t tell by the pictures I played a LOT of Sudoku the last couple of days.  I definitely caught up on sleep as well.  What do you do to pass the time on flights?

I was so happy to see my dad when I got to St. Thomas!  And I was pretty happy about the dark chocolate turtle he handed me as soon as we got in the house.

It was very nice reading magazines on my old bed while my parents cooked up dinner.  And it was a tasty one.

Mmmn.  I quit eating red meat before I had the chance to try a “real” one, but turkey reubans are kind of my favorite.  I had a tempeh reuban in NYC that was socks rocking and there is a place here that I’m planning on getting one from this week as well.  Like reubans?  Hit up Allison.

After dinner I went in my room to read.  And fell asleep at 8pm.  Yes folks, that is 7pm Buffalo time, out like a light!  It’s just as well because I had to get up around 6 to go to school with my mommy.  My parents don’t have internet so I’ll do all my blogging from here.  I have Anthro work to make up all week/end and I have a doctor’s appointment for my foot at 11am today.

Blue Skies

It’s been a good day so far, and we have even more excitement planned for this evening.  I leave Orlando tomorrow afternoon so we are trying to fit in as much as possible, even if I do have to lurch around like Quasimodo to do it all!

I woke up around 9 this morning and by the time I was dressed and done stretching a breakfast breakfast didn’t sound very good.  Instead I ate my Pad See Eiw leftovers from last night.

Kristen had to work today but Camile and I took the opportunity to pamper our tired tootsies with pedicures!

This is my first pedicure in forever due to my foot problems so it was especially exciting.  My right ring toenail is probably going to come off soon but for now it’s looking good in sky blue.

We went to Publix afterwards to buy Kristen some ‘thank you for driving us at 3am’ flowers,

so I did lunch in the car.  A mini white chocolate macadamia Luna Bar from the expo,

and a apple banana Buddy Fruits.

I see some yogurt and a diet soda in my near future as well.  I’m not saying what the evening entails but I will tell you that I am so excited 🙂

What color would you pick for a pedicure now?  I felt like blue was the perfect spring color, but I was eyeing the purples pretty hard too.

Oh the Places We Went!

Hey guys!  My second day in Orlando was so much fun; we are having a great time and eating lots of tasty foods.  Sadly, I feel like I need to keep this post quick because it’s bedtime and I’m tired.  It’s funny how the better the quantity of blogging material I have the more the quality of my posts go down.

Kristen was great about getting food requests to have in the house this weekend.  Breakfast was Dannon Greek yogurt with a chopped nectarine, topped with a tsp of strawberry jelly, in a go cup.

The nectarine was so delicious, Florida is definitely the place to be for fresh fruit right now.

After breakfast we trekked to Disney to pick up our race packets and hit up the expo.  I had a good time checking out the fun shirts and stuff but didn’t really have money to spend.  I did pick up a belt pack (i.e. fanny pack) which I proceeded to wear for the rest of the day.

We did lunch backwards today, dessert first then grown-up food.  First things first, Menchies!

I’ve been jealous of Meghann for months and my envy was totally justified, this place was ridiculous!

I got original tart yogurt with fresh fruit and a small dab of marshmallow sauce.

YuuuuuuuuM!

Lunch was not new to me, but is something I’ve been missing in Buffalo – Whole Foods salad bar.

I got seitan and veggies, bbq seitan, kung pow chicken, a stuffed grape leaf, and some roasted veggies.

Then we met up with a bunch of our friend’s friends at Universal Studios.  Seriously?!  I could not have had more fun today.  This was my first time at Universal and it was amazing.

Even if I did get a little wet.

My favorite part was the Dr. Seuss area.

Fun fact – my tattoo was partially inspired by the star bellied Sneetches.

It was so great to walk around all day and stretch my legs.  When we left the park I, ahem, refueled with a white chocolate and heath covered marshmallow stick.

Our dinner plans were for Seasons 52 but sadly there was an issue with our reservations and the plans fell through at the last minute.  We had driven past an Elephant Walk on the way that my friend Camile was super excited about so we ended up going there.

I had a diet coke and amaretto to drink before dinner.

And I ate 2 pieces of tempura salmon sushi for an appetizer.

I really wasn’t sure what to order for dinner.  The food choices were more American-Chinesse than what I usually prefer (authentic as possible Thai).  They had honey shrimp, sesame chicken, and similar things that sounded good but I knew would be unpleasantly unhealthy.  I ended up ordering tofu and veggie stir fry and asking for the sauce on the side.

My meal ended up being pretty tasty, I was definitely not disappointed.  I didn’t eat any of the rice but I pretty much decimated the rest.

We had big plans of heading out after dinner but we were all so tired it seemed much more pleasing to come home and go to bed.  I know 11:30 isn’t exactly early, but it will make for a better wake up tomorrow than a night of drinking would have!

What is your favorite Dr. Seuss story?  I am a really really big Seuss fan.  The Sneetches, Yurtle the Turtle, and The Butter Battle are all favorites but Oh, The Places You’ll Go really has my heart.

Is March My Month?

It’s been a good day, I think March is going to be my month!  However, the day is sadly far from over so I’ve got to keep this quick.

I have to show you my best layered look to date!

Oh yeah.  And it was so warm (40*) that I didn’t even wear my coat today, score!

I spent so much time looking for tall socks to wear with my Uggs that my planned lunch couldn’t get packed.  Thankfully Mix1 recently sent me some drinks to try out so I grabbed the dark-berry flavor.

The taste was a bit off to me but it got through the lunchless hour so I’m a fan.  Oh yes I did pick the purple one to match my outfit!

My doctor’s appointment went perfectly: my surgery is almost 100% healed and I have no more foot warts!!!  I was seriously grinning so big when I left that office 😀

I got to campus an hour before my first class so I grabbed lunch while I worked.  You can’t go wrong with a bagel and Diet Coke.

I went with a cinnamon raisin bagel with strawberry cream cheese, yum.

I asked the woman to use 1 scoop (~1.5T) of cream cheese only and that was perfect.  A “traditionally” made bagel from that spot is a bit too much of an indulgence.

When I was leaving campus after my second class – 5hours later – I complained to the husband that I was hungry again and he pointed out my favorite chips ever as we passed the vending machine.

I’m sorry, at 150calories for buffalo and blue cheese all in the same place these chips are never wrong!

But to keep things healthy I made my dinner nice and green.

A leftover turkey burger with blue cheese and carmelized onions.

Some steamed broccoli and cauliflower.

And a pile of roasted collard greens.

I put a little bit of lime ponzu on the veggies and there was a side bowl of ketchup for the collards.

It’s after 9 and I have at least 2more hours of to-do’s today 😦   Hopefully I can get enough done today and tomorrow that I can leave stress-free on Thursday.  Tomorrow is my 8am lab and then I have a lunch date with my friend Kate so I’m not sure when I’ll be posting.  I hope everyone else is having a stress-free week!

What is your favorite kind of chips?  I seriously almost never ever used to eat chips, I don’t know what is with me these past few months but it’s like I can’t get enough!

Pan Panic

Whew, it feels like a while since I’ve been here!  I was in a terrible mood yesterday, I’m glad I was too busy to post because I’m not sure how chipper I could have been.  I was out of control hungry all day and in a god-awful mood and I ended up eating all sorts of junk.  On the plus side – I didn’t break my vegan challenge, my house is much much cleaner, and reading all your wonderful comments on my running post put me in a better mood! 

I will show off my newest layer-tastic outfit though  🙂  This vest is one of my favorite items of clothing.

And you better believe I’ve got another layered look planned for Thursday!

Today is going to be pretty crazy as well.  I had lab this morning and the husband has an observation this afternoon so I’m stuck on campus all day.  Once he’s all done and picked me up we are heading straight to Target – our nonstick pans are peeling and I’m pretty sure we are cooking our way to cancer!!!  😮

This morning I got up a bit early to pack a lunch and whipped up some smoothies for Adam and I.

~2cups frozen strawberries + 2cups Silk Light Chocolate Soy Milk + 1scoop chocolate Amazing Grass = tasty smoothie x 2

Lab went well, we had a substitute and we got out super quickly.  I’ve made good use of my campus time thus far.  I finished all of my post-lab calculations and I am officially 2 weeks ahead on my pre-lab work!  Then I started some reading and cracked open my lunch box 🙂

And I’m about to drink this Naked Blue Machine I picked up at volunteering.

The juice is pretty concentratedly caloric (340 per bottle) but I planned on it being the “bulk” of my lunch so it works out well.

I’ve got to get back to work!  When you ‘see’ me again I’ll be the proud owner of a new set of pans!

What kind of pans do you have?  Any recommendations or horror stories?  I’ve been pretty pleased with our pans but now that they are peeling in little flakes I’m a little freaked out.  Our selection will definitely be informed by our budget, but I want to make sure we get something that will allow us to cook healthfully.

Death and Taxes

Hey guys!  Sorry for rushing out on you last night, I managed to get to the hospital just in time so that neither the husband nor I had to wait.

This morning I went with a bowl of oatmeal for breakfast before volunteering.

I topped 1/3 cup oats with a splash of soymilk, a big shake of cinnamon, 1t maple syrup, and natural peanut butter.

Delish!  The mix of flavors in this was great.  I usually am not the biggest oats fan (especially without banana) but lately it’s been tasting so good to me.

Volunteering went well today, they kept me super busy for a change.  There’s another volunteer on my same shift now and we get along really well so it makes the time pass all the more quickly.  On my way out I used my lunch voucher to fill up a little container of pineapple.

Then for lunch lunch I made a big plate of roasted veggies.

and kale crisps with garlic powder on them.

Sadly my tasty lunch was ruined by the fact that I was on hold for 15+ minutes trying to get my W-2 form.  I still just can’t quite get myself away from the soul-crush that is the NYC DOE.

I have plans for a study date this afternoon at the Spot and then a quick but fun dinner.  Hope everyone is having a great Monday!

Have you started your taxes yet?  Do you go it alone or have someone/a service help you out?  We are using H&R Block this year.  Our goal was to finish them weeks ago but the lack of w-2 forms is really gumming up the works.

Packed Snacks Save the Day

It’s been a great day of family fun.  Bowling was great; especially because we had the bumpers up so I scored more than a 40 for a change!

While at the alley I snacked on a Buddy Fruit pouch.

Mushed fruit pouches are kind of my favorite thing but I never buy them because of the packaging waste.  However, the road trip seemed like a good excuse and it was a nice treat.

I tried to eat this Chocolate Green Superfood bar.

Eeeeeeyuck!  I had a bite, and I regretted it, the flavor tasted way off to me.

Unfortunately the superfood bar had been my main plan for the evening and I was starving by the time we made it to dinner.  I had a slice of bread (x2).

I’m not 100% that this was vegan but I was starting to feel faint by the time we sat down.

For my meal I ordered a plain veggie wrap.

Another failure; the wrap was chunks of cold lettuce with cooked peppers, which I hate.  I demolished the fries but couldn’t even choke down half of the sandwich.

Thankfully I had a better back up plan for dinner.  I’ve been eyeing these Allergaroo packages for months and I was glad to have an excuse to buy one.

The nutritional stats were pretty impressive and the meal was super tasty and ready in under a minute.  It would be super easy to stir in some veggies to this too.

All total this was probably my hardest day of the vegan challenge.  I am still pretty hungry (starving actually) and will definitely do some snacking this evening.  We are heading home tomorrow so I’ve got to soak in some family time but I’ll do a snack recap in the morning.  Good night!
