Preppy Provisions

As promised, as soon as I published my last post I found myself some fruit and carbs.

The very last serving of the spinach pesto pasta,

and some watermelon cubes.

This combination was surprisingly delicious.

And since my carb was very green and my fruit was very pink, this combination was a Lilly Pulitzer approved lunch.

Sometimes I wish I dressed preppier but I wore Doc Martins in high school so I’m not sure it’s allowed.

The gym did not happen but I think that was a good thing since dinner didn’t happen either.  Adam and I had some exciting and expensive errands to run (hopefully I have some news to share this weekend) and the night got away from us.  Plus we had a gigantic pointless fight.  We suck.

But to end this post on a positive note; do you know what doesn’t suck?  This sky –

What is the stupidest thing you’ve ever fought with a significant other about?  One time in high school Adam and I almost broke up over a hair crimper.

Out Of The Pan

Yucky!  The olives and the cheese in this morning’s breakfast were both a little bit old and one of the two (or something!) made me feel sick all afternoon.  When Adam stopped by the apartment after his final he told me I looked dead.  Thanks, hun.  All I know is all of a sudden it was 3 pm and I still hadn’t eaten or left the house.

I ate a little less than a serving, straight from the casserole.  If eating out of the serving dish occasionally is wrong, I don’t want to be right.

Dessert was straight out of Compton from the container as well.

I love afternoon baking projects.

I made a mini blondie (technically 2 servings) with butterscotch chips and shredded coconut.

I’m not going to share the recipe yet because it was a little too spongy.  Though it was pretty darn good topped with a scoop of vanilla bean frozen yogurt.

I really should be done with indulgences for the day, but nonetheless we’re headed to Brewfest!  20 samples of 3 ounce pours, here I come!

Easy Eats

I accomplished so much yesterday that today was actually a bit boring.  I’ll take it though.  And I’ll definitely take the fact that I had to skip today’s workout because my abs were so sore from yesterday’s 90 minute hot yoga session.  Whoop!

Breakfast was easy and summer-y.

1.5 servings of cinnamon Puffins, .5 serving of oats and honey Bear Naked Granola (which is like a Tbsp, seriously?!), chopped plum and white apricot, and skim milk.

For a mid-morning snack I measured out 2 servings of the peanut brittle popcorn my in-laws gave me for my birthday.

This stuff might be dangerous.

Lunch looked borning.

But looks can be deciving.  That’s not pb & j.

That’s a mini kaiser roll topped with Nutty Guys honey roasted peanut butter, crushed up honey wheat pretzels, and a drizzle of honey.

And what goes with a peanut butter (pretzel, honey) sandwich better than milk?

Milk also goes well with cookies.

But those aren’t for me (though I did eat a few cookie’s worth of dough!), I baked them up for The Great Fundraising Act.

Instead of cookies, Adam and I snacked on hummus this afternoon.

Not just any hummus though, Sabra Roasted Pine Nut Hummus that I got to try for free as part of the Foodbuzz Tastemakers’ Program.

Usually I’m too cheap to buy hummus because you can make it easily at home, but I think it’s time to update my policy!  Adam and I both thought this was delicious; creamy with a great roasted flavor.  The pine nut was a great new twist, though Adam thought it wasn’t as zesty as the garlic variety we used to buy.  Plus at 80 calories per 2 Tbsp serving it’s a nutritional steal.

I ate my serving(s) with some baby carrots.

Keeping up the easy eats theme of the day, dinner was leftovers.

I piled the steamed collard greens, millet, and baingan bharta into one bowl, topped with tons of Sriracha.

Easy, like your mother.  Ba dum ching!

I made a couple of mistakes this morning, as is fitting for a Monday.  I made a mistake when I hit my snooze button because it made me late.  I made a mistake when I slammed this white chocolate macadamia Luna Bar on the walk to yoga because it made me nauseas.

Good flavor though.

I made a mistake when I thought the 9:30 class this morning was my typical warm yoga because what I was really rushing to was the (harder, hotter, longer) 90 minute, 105* class.

That wasn’t really a mistake though, more like a helpful push from the universe.  I was too afraid to try the hot yoga class on my own, but once I was there I loved it.  I probably spent a third of the class in child’s pose but I still got in a great workout.  I’m not going to give up the warm 60 minute class entirely, but I will be back.

After yoga I had to shower and clean the house, but then I finally sat down for lunch.

I dressed my leftovers from yesterday’s salad with Newman’s Own Light Caesar.

The beets made everything a little pink, but since I kept the dressing off until today my salad was still nice and crispy.

On the side I enjoyed some local cherries in a new birthday gift bowl.

This lunch and breakfast set was on the small side for me but after I run some errands I’ve got my eye on an afternoon baking project and I’m sure I’ll make up the calories.

Leftovers For Brunch

I still haven’t finished my June book (per my resolution to read one new book a month), so that’s where I was all morning.  I wanted to do brunch today, rather than breakfast and lunch, so that worked out nicely with my schedule.

I’m going to yoga at 1:30 (first class since I tweaked my back, yay!) at the lunch-time timing had me worried.  I want to be well fueled, but not full bellied.  Chinese leftovers for brunch to the rescue!

My take-out dinner did in fact end up being good, although clearly I ordered too much since this plate isn’t even all of my leftovers.

On the agenda for today –

  • yoga
  • lots of cleaning the apartment before my parents get here
  •  making the dinner I kept putting off
  • high-brow reading

Happy 4th of July

America the beautiful.

Adam and I had a great July 4th, I hope you guys and your families did as well.

Apparently my husband is a bad influence; I was dressed in running clothes when he pulled me back into bed this morning!  It got too hot outside to run so instead we ate leftovers on the couch.

Cheesecake Factory’s spicy cashew chicken might actually be better the 2nd day.

We had to grocery shopping this afternoon and I snacked on an (American as apple pie) apple along the way.

Like my red, white, and blue?  Being able to dress in theme colors is my favorite part of any holiday.

We celebrated Adam’s day off for the holiday with our favorite activity – a nice long walk.  Midway we split a Sprecher Orange Cream Soda.

Soon enough it was time for red, white, and dinner.

Blue corn tortillas, filled with crumbled tofu cooked in red enchilada sauce, topped with (white) sour cream.

We used this Frontera red chile enchilada sauce and it ended up being pretty flavorless, boo.

Plus some roasted brussels sprouts.

Sadly it was a kind of meh dinner overall.

Normally this wouldn’t have been near enough food for me but thankfully we did a lot of baking today, and I did lots and lots of nibbling!

4th of July cupcakes –

The cupcakes were simple white cupcakes with vanilla frosting, turned festive when dyed red, white, and blue and swirled together.

So fun!

Also fun?  We’re watching “Newsies” this evening!

The Board Beard

Adam is finished with his Step I Board Exam!!!  He won’t know his score for a while, but this means he has a free week to relax with absolutely nothing he should be studying.  This also means he’s finally going to shave.

That, my friends, is a “board beard.”  The husband has had a (normal, groomed) beard for several years now and I love it.  Much to my chagrin, he decided a month or so ago to grow a board beard.  Basically, he wasn’t going to shave again until after the exam.  I’ve been sharing a bed with Paul Bunyan, lovely.

But boards are done, so that thing’s got to go!

My day was a little more low-key than Adam’s obviously.  I did get up at 6am to make him a protein smoothie, but I’m the driver this evening so I crawled back into bed until 9:30 to make sure I was well rested.  Since I did the prep work last night, I awoke with breakfast waiting for me.

I dumped 1 sliced banana, 1/4 cup oats, and 3/4 Silk Light Vanilla Soy Milk into the 0% Plain Fage container with the last bits of yogurt.

This morning all I had to do was stir in some cinnamon sugar and move my overnight oats to my new mug.

I picked this kitchen addition up from Budala Pottery at the Allentown Art Festival and I’m loving it.  It has a nice round bottom (great for people who prefer to eat things out of their mugs than drink) and I love the look of the handle.

After breakfast I had planned to go to the gym but I’m starting to get nervous about driving all night (and moving all day!) so I decided to skip it.

Lunch.

One last serving of vegan pasta leftovers, deveganized with parmesan cheese.

It felt good to get some veggies into my system before I head on the vacation I’ve deemed “Frozen Yogurt Tour 2011!”

Plus the last of the soy milk with chocolate syrup.

If it looks frothy it’s because I shook the crap out of it.  I recently read in an issue of Cooking Light that if you aren’t shaking the sludge from the bottom of your soy milk you’re not getting the added calcium.

I spent the afternoon packing – both of our bags, car snacks – and as soon as Adam gets home and shaves we’ll be ready to hit the road.  We are reaching his parents’ house sometime in the middle of the night and spending all day Sunday helping them move.  There’s no internet at their house so I will see you guys on Monday!

What I Wouldn’t Eat

I did indeed walk to the Co-op this afternoon, they often have Friday sales and I wanted to get in on that action.  I tried to restrain myself though since I have high hopes that I’ll get to visit a Whole Foods on vacation!

I tend to be a little suspicious of Co-op produce since they’ve given me fruit flies in the past (and especially because my spongy plums were bought there) so I ended up buying a Naked Juice to get my fruits for the day.

Adam and I split this Power C Machine 50:50.

As I walked around the co-op my internal thought process went something like this –

Cookie?  Coookie.  I really wish I had a cookie.  A cookie would be crumbly and delicious.  I could buy a cookie from the co-op bakery.  No, I could go to Wilson Farms and get a sandwich cookie with the delicious icing!  No, I could drive to Wegmans for a toffee white chocolate cookie!

If you’re wondering, I ended up not getting the cookie.  Janetha (whose blog always makes me laugh and makes me think) asked this question the other day“what’s on your [foods I’d love to eat if calories didn’t matter but don’t eat all that often because they do] list?”  After some thought, I realized that my answer was nothing.  For the last year or so I’ve eaten pretty much every single thing I’ve wanted, every day. 

It sounds fun, and it was, but food can be more fun in moderation.  Plus, being in better shape would also be fun.  I’m still going to eat ice cream/cookies/nachos/other holy-yum-ness (especially on next week’s vacation that I’ve already deemed “froyo tour 2011!”), but maybe I’ll stop eating that stuff every single time I want it.

All that rant was to say, instead of buying a cookie I made myself a yogurt dessert bowl.

A small bowl of 0% Plain Fage with honey, shredded coconut, and a few Nestle morsels.

It was delicious and I’m pretty sure I enjoyed it even more than I would have enjoyed the cookie.

We ate leftovers for dinner.

A healthy balance of carbs and protein that will hopefully help Adam power through his test tomorrow.  Plus, roasted zucchini just tastes good!

If there was a magic universe where calories and nutrients really didn’t matter and you could eat totally by taste, I would still eat roasted veggies!

Sometimes we eat things just because they are good for us; if calories and nutrients didn’t matter – what foods would you STOP eating?

Thankfully I love fruits and veggies so much that I can’t think of a single item to put on that list!  There are times when there’s a veggie that isn’t cooked perfectly and I eat it just because it’s a veggie, but in general fruits and veggies are some of my favorite foods.
