Bento Box Lunch

Today’s lunch was packed Bento-style.

If you follow me on Instagram, you may have seen the awesome care package that Cascadian Farm sent me awhile back:

Among the goodies was a Bento Box lunch box from Laptop Lunches.

The box is dishwasher and microwave safe and the little boxes are the perfect size(s) for lunchtime goodies – two of mine came with additional lids.  It is pretty awesome.

Today I packed a fruit and veggie spread.  Cucumber slices and cherry tomatoes with a sprinkle of salt.

Ohio Surprise!

The past weekend I drove to Ohio to pay my mom and grandmother a surprise visit.  Adam was actually already with them hanging out but we weren’t sure about my work schedule so I didn’t want to tell them any plans.  The timing worked out at the last-minute and I showed up in the parking lot one night after dinner and scared the crap out of them.  {Surprise!}  It was great to get some family time.

I didn’t manage to snap many pictures, but we did have a fun weekend.

We went to Sonic and a giant strawberry diet coke rocked my face off.

P.S. After family time, Adam drove to meet up with friends for a Tough Mudder challenge.  He is officially a bad ass.

The Jolly Roy Rogers

If you’re anything like me, you enjoy going to bars and ordering ridiculous, embarrassing drinks.  This drink is both awkward and insanely delicious.  I didn’t invent the combo (thanks, random bar in Boston) but I was pretty pleased with myself when I came up with the name tonight.

  • Coke
  • cherry vodka
  • 2-4 maraschino cherries

Alternative recipe – Diet coke, grenadine, cherry vodka, cherries.  I’m trying this variety next time!

Spinach And Sprouts Scrambled Eggs

This post comes to you from breakfast.  Adam and I both had the morning free so I scrambled us up some eggs.  I know the sugar sounds weird, but go with it, the sweetness just works.

Whisk together 4 large eggs, 1/4 cup skim milk, 1 Tbsp granulated sugar, and a pinch of salt.

Sautée 3 cups raw baby spinach, 1 cup radish sprouts, with 1 Tbsp Earth Balance Buttery Spread.

Scramble egg mixture into cooked veggies.  Fold in 1 cup shredded parmesan.  Serves 2.

Spinach Salad With Soft Boiled Eggs

Dinner tonight was a delicious salad.  I had to get in my greens on Earth Day!

A bed of baby spinach topped with a sprinkle of salt, radish greens, blue cheese crumbles, and two soft-cooked eggs.

I use Jenna’s recipe for soft-cooked eggs and they come out perfectly every time.

The flavors all melded nicely and I used creamy yolks in lieu of dressing.  Plus, I fit every single food group into one meal (I had a fruit smoothie and slice of ciabatta bread on the side)!

The new grocery store in Orchard Park is amazing; Wegmans and Whole Foods wrapped up all in one.

Classed up mac and cheese is super easy and tasty {boxed mac and cheese / peas / smoked kippered herring / capers / parmesan / panko / red pepper flakes}.

Time For A Blog Break

I am usually not one to follow trends, but unfortunately I need to take a page from some of the bigger bloggers and take a break. Sort of.

There are a lot of things going on in my life right now that I can’t blog about. This makes doing full-day posts tricky, and not all that fun. So for the next couple months, I need to pull back. But… when I am done with school and we’ve moved and my life is my own I do plan on going back to my usual style.

For now, I still want to blog most days of the week. I plan on sharing fun things we do, product reviews, new recipes, goals from my birthday list, and anything particularly tasty. I hope you guys will stick with me!

Bloggers – how has your posting schedule changed over the years?

On The Run

This morning Adam, Webster, and I headed to the park.  They went frolicking and I went running.  I started the Couch-to-10k plan, again.  I refuse to go back to week one (I’ve started the plan four times in as many months, it’s embarrassing at this point) so I did the first day of week two – intervals of 4 minutes walking / 1 minute running, x 8.  Plus 5 minutes of straight running at the end as I hurried to find a dog and husband who are bad at following directions!  I was great to be outside.

The rest of the day included schoolwork, a shift at work, and an evening of tv.  In fact, we are mid-Bones right now so I’m keeping this short.

Here’s what I ate…  An Alter Ego Mini Dark Velvet chocolate bar.

This stuff was amazing, the perfect blend of milk and dark chocolate.  It had dark’s tang with the creaminess of milk.  Total love.

This would have been awesome, but the whole flax seeds kind of ruined it for me.  Nonetheless, this Yumvelope (the source of the bar and the candy) was a good one.
