We’ll Call This a Whine-cap

It’s been a strange couple of days around these parts.  My hunger has been really weird and I was in a random bad mood all day yesterday.  I’m sorry for not posting yesterday.  One thing’s for sure, I did NOT spend all of last night finishing the final season of “Buffy” with the husband instead of studying for my sociology exam.  Definitely did not.

We went to see “Killers” (ugh, waste of $) Sunday afternoon so I ate lunch via movie snacks – a big baggie of baby carrots and 2servings of spice drops.

I also ate this Himalayan mint – raw honey, unsweetened chocolate, peppermint oil – en route to the theatre.

When we were home, watching not watching Buffy, the craving for popcorn finally hit so we hiked over to Walgreeens to get a bag.

We also split a sherbet melon.

I was really excited about this new fruit but I think we let it get too ripe because it ended up basically being a mushy cantelope.

Dinner was another frozen meal from the Tandoor Chef line, Channa Masala –

While not as delicious as the veggie pad thai it was still ridiculously tasty, and the nutritional stats were a bit better.

I ate the whole box, or 2 servings.

This morning my move did improve drastically when the husband cracked open a young Thai coconut for me.

I drank some straight from the source but the rest of the water and flesh I blended with ice cubes and cinnamon-sugar for a fabulous smoothie.

Did you know young Thai coconuts only have ~200calories?  I finally looked it up, but I’d been assuming that the number was much higher.

I also ate a Thai Peanut Primal Strip in the car.

It was ok, but I prefered the flavor of the bbq.

The husband dropped me off at school today and took the car to the lab.  The benefit of that is twofold; 1. I had more time to cram study for my sociology exam, and 2. I got the incidental exercise of the 2.5mile walk home.

I was all set up to study in the food court when my stomach starting growling howling.  My smoothie and Primal Strip added up to ~300calories which isn’t a huge breakfast but is definitely able to hold me over on many a day.  Well not this day.  I seriously got panicked when it looked like I wouldn’t find a snack and I almost ate my packed lunch!  Thankfully I spotted a humus/pretzel pack at the coffee shop.

After scarfing the snack pack (and drinking an entire Sigg’s worth of water) I finally felt full enough to tackle my book.

I ended up being really confident about the information but the test only went alright because the questions were worded really poorly.  I feel like as a teacher for two years I’m qualified to comment on that and seriously, the test sucked.  Still, I got the best grade in the class, by a lot.  For reals kids?  I could also school you in how Buffy ended!

I stopped midway during my 2.5mile walk home to sit at a coffee shop and study for a few hours.  Since I knew the vegan pickings would be slim I packed my own lunch, a Kona Moka Pro Bar.

The flavor (a little touch of sweet) and texture (a lot like a Lara/Kind bar hybrid) were definitely impressive and it was pretty filling.  At 360calories this was more of a meal replacement than snack bar.

When I got home (after finishing my walk) I snacked on 2servings of yellow tortilla chips with 4T of chunky salsa.

Now I’m doing some organizing and waiting for the husband to get home and help me chop dinner.

Wow.  That was an insanely whiney post!  Any Monday complaints you’d like to whine about?

Top it Off

I am leaving to pick up the husband in exactly 29minutes so I’ll try to do this Speedy Gonzalez style.

This morning had all the components to make me cranky – I overslept and I didn’t get a chance to read and I was dropping everything I picked up.  Does that ever happen to you?  I think the main reason I don’t really wear make-up is because I’m always irritating myself by dropping the brushes!  Nothing a big smoothie can’t fix though.

1 banana + 1cup frozen blackberries + 2T unsweetened shredded coconut + 1cup So Delicious Vanilla Coconut Milk + 1t xanthan gum + 6ice cubes = filled to the brim.

The coconutty flavor in this was awesome, I don’t think there’s anything that isn’t better with coconut.

We actually got our 1ominute break in soc today (hallelujah!) so I took the opportunity to snack on a bag of Peeled Snacks dried pineapple.

Best dried pineapple ever!  I don’t think I’ve ever seen dried pineapple sans added sugar before (maybe at Trader Joe’s?) but this bag was just fruit, and since it’s available at Starbucks I don’t need to make a trek to NYC to get more!

After class I stopped in at Cafe59 – the coffee shop on my street – to get caught up on my reading.  While I worked I ate a delicious salad for a late lunch.

For a set price, they offer a build-your-own salad in which you get to pick lettuce, dressing, and 5 toppings.  I adore BYO in general, but this might be one of my best combinations yet.  I choose romaine lettuce and balsamic dressing with sundried tomato, green olives, Portobello mushrooms, marinated zucchini, and roasted garlic.

The flavor combination was kind of fantastic.  The big pieces of roasted garlic really made it.

The husband and I have some fun plans for the evening, I’ve just got to go get him!

What are your favorite salad toppers?  I’m partial to carmelized nuts and goat cheese, mmmmn!

A Day of Firsts

In case you missed it, June is Vegan Month.  And what better way to start off the month than with a Green Monster?

This bad boy had 1 frozen banana and 1 cup frozen spinach blended with 1 cup of calcium + vitamin d oj.

Green Monsters were my favorite discovery during my two-week vegan stint in February, and I think they are going to be instrumental in getting me through this month.

Today was also the first day of summer school.  I have an online nutrition class in July, but in June I have to be on campus from 10:30 – 12:40 M-F for Sociology.  Here we are looking bright-eyed and bushy-tailed –

And then during one of my five trips to pee before class started I snapped a picture of me looking nervous.

And right I was to be nervous, this is going to be a hard month!  My professor is funny but his lecture voice is really hard to understand and the syllabus is totally unclear.  I hate when teachers want to be all loosey-goosey with the due dates; tell me what I need to read for what dates!  Plus we are not allowed to have any food or drinks in the classroom?!

I had some business to take care of on campus and by the time I got home it was after 2 and I was starving.  I grabbed the first thing I could to tide myself over.

I was so hungry I was actually getting light-headed and nauseous.  Once I calmed down a bit I made myself a frozen meal as well, Tandoor Chef Vegetable Pad Thai.

The nutritional stats on this are pretty good,

and it is delicious!

It tastes just like tasty, authentic Thai food from a restaurant.  The pasta is the right texture and it is perfectly seasoned.  Plus there are pieces of spongey fried tofu that I adore.  I give this two thumbs up and highly recommend you try it, vegan or not.

I’m actually still feeling pretty sick so I’m going to set the alarm and see if I can take a quick nap.  I have to pick up the husband from the lab later and of course I’ve got some reading to do.

Getting All the Bad Stuff Out of the Way

Hello from Boston!  Sorry I didn’t check in yesterday, it ended up being kind of an insane day.  I’ll keep this post short too, because there is vacation fun to be had outside!

The morning was spent packing (sort of, I kind of just throw stuff into a suitcase and hope for the best) and we piled into the car around noon.  Adam took his last final of the 1st year of medical school in the morning, everyone say “congrats, Adam!”

I ate a 2% Fage with Strawberry once we got on the road.

As well as a half serving of Guylian shells.

Adam drove the first half and by the time we stopped somewhere that had actual food it was my turn to drive.  I did the best I could with “lunch” at Starbucks.

Chocolate Banana smoothie with skim milk and whey protein.

Not good.  But I gagged my way through 2/3 of it because I was hungry.

It was so exciting to see Nikki!  We spent forever finding parking for the car and ended up at Coolidge Corner for drinks.  I got a Woodchuck Cider.

When our friend Ian arrived we headed across the street for sushi.  I was starving (all I had eaten all day was a yogurt and part of a smoothie) so I went with something that sounded big, The Volcano Roll.

Plus it sounded neat, which it was –

It was a great mix of textures and flavors (spicy!) and a lot of fun to eat.  The mushrooms were delicious.  Everyone at the table had their chopsticks in it.

It was also super filling so I only had about 2/3 of it.  If only I had known…..

We walked down to Sunset Bar next, Adam and my favorite place to visit because of their awesome beer selection.  I was thrilled to see 21st Amendment Hell or High Watermelon on the menu.

Perhaps you remember it from the Foodbuzz Festival?  I also got super excited about the watermelon theme and ordered a housemade watermelon soda.

Yummy, but I’m not really a sugar soda gal so I took a few sips and shared the rest.

A couple notes here – I had two drinks.  I was not drunk.  I only took a few small sips of my sweet soda.  My meal was rich but I didn’t eat that much because I shared.

I came home and got so sick!  Like insane, projectile, whimpering sick.  It was a bit ridiculous.  I’ve had bad reactions to random foods before and this felt like a similar experience so I can only assume that there was something in the sushi my body didn’t like.  I felt a lot better when I was done throwing up but the whole experience was so frustrating!

But I’m feeling better now, so it’s time to get out a conquer the world! (and get some coffee)

Have you ever gotten sick on a vacation?  I have terrible luck with vacation sickness, I’ve thrown up in more airport terminals than I can count!

Like Swallowing Barbed Wire

This is my final post.  It’s likely Adam and I will both be dead by morning.  You’ll see……  Also, I’m keeping this quick because I’m blogging mid-couch time.

For the husband’s main course I made him something fabulous looking out of leftovers – chicken, bacon, condensed mushroom soup, broccoli.

I also baked up the last three slices of bacon for myself.

It was the protein of my dinner!

For Adam’s side and my main course our plan was to try something new – baby artichoke hearts.

They took forever to make, because we peeled them, and cut off the thorny tips, and cut out the fuzzy thistle.  While we worked I got in my fruits for the day –

1 frozen banana, 1/2 cup frozen blackberries, 1cup calcium + vitamin d oj, and 1t xanthan gum all went into the blender for a fantastically purple smoothie.

And much, much, much later dinner came out of the oven.

Roasted artichokes and potatoes with evoo and salt.

Great sounding concept right?  We loosely followed a recipe from Cooking Light, very closely following the artichoke instructions.  Not so much.  The potatoes were fantastic but the artichoke hearts were difficult to choke down.  I abandoned my plate halfway through, although I did eat another 2 servings of potato.

Now the husband and I are both clutching our stomachs in pain.   😦  We are going to cuddle and cry on the couch until bedtime.  A big bowl of popcorn will probably be involved as well, because I’m still hungry and because I feel like my stomach wants me to scrape it out.

Fridge Traffic JAM

It’s officially the first work-week of May!  Where has this year gone?!?  For that matter, where has today gone, it’s all felt a little rushed.

Adam and I both had another lackluster sleep last night 😦  Isn’t it just the worst feeling to toss and turn when you’d like to be resting up?  The morning felt like it came way too quickly and the snooze buttons were pressed several times.  I had to drive the husband to school so I could use the car to run errands, so I rushed out the door with him.  How happy am I that it’s finally throw on a sundress season?

I was a little irritated to have to go to the post office when I hadn’t even eaten breakfast but it ended up being a good thing because my parents send me an amazing package!  It was Carnival in St. Thomas last week and they sent me all sorts of goodies –

I packed the soursop jam away into cabinet before I could even look at it.  I have a problem –

Seriously, Emily?  6 open jars of fruit spreads!

However, I tore into the stewed tamarind immediately.

A few spoonfuls in I managed to stop myself and actually assemble breakfast.

Stonyfield plain fat-free yogurt with stewed tamarind and 1/2cup raspberries.

I couldn’t get over how pretty it was and the taste combination was amazing!

Eat More Fruit Tip # 1 – Instead of buying “fruit on the bottom” yogurts, make your own!  Plain fat free yogurt with berries and fruit spread stirred in has less sugar than the ones you buy at the store, and is a whole lot tastier too!

Lunch was pretty gorgeous as well.

Eat More Fruit Tip # 2 – Smoothies are a very tasty way to eat your fruits, just be sure not to add too many high-calorie/sugar additives.

I had a whole slew of annoying phone calls to make and the morning slipped away while I was on the phone.  By the time I was headed out the door I was already late so I made myself a to-go smoothie for lunch.  1 small frozen banana, 1/2cup frozen blackberries, 1cup calcium + vitamin d oj, and 1/2t xanthan gum.

The smoothie was supposed to be swim fuel but sadly that didn’t pan out.  When I got to the pool all of the lanes were full and I was too late picking up Adam to wait. 

The swim no-go is especially annoying because I don’t want to swim, I want to run, and I can do that any where.  My hopeful date to start running again is May 10th and I’m getting a little nervous because my leg still hurts.  The doctor said it would hurt up until it was healed (and then I could get moving again) but I’m so afraid that the 10th with come and go and I’ll still be stuck.  I’m so eager to run again that it physically hurts when I see other people out on a job.  I made get-well wishes on several of these today.

A Day That Wasn’t

I accomplished less than nothing today.  Seriously.  And I seriously don’t want to talk about it.  😦 Boo, let’s just get to the food.

This morning I used the amazingness that is Thai young coconut,

to make this amazingness.

The world’s simplest, simply amazing smoothie contained the flesh and juice of one coconut, a big shake of cinnamon-sugar, and 1/2t xanthan gum (which still was a bit too much gum).  So simple and too tasty.

Dinner was courtesy of Wegman’s salad bar.  My one and only accomplishment today was getting the grocery shopping done.

Wok cooked veggies and blanched broccoli,

and amazingly delicious eggplant.

This is quickly becoming my favorite veggie!  I normally would stick to a smaller serving of something that looked fried, but Wegmans is becoming very nyc-ish and they had the nutritional info posted next to the dish – 140calories for 1cup.

Sorry to be in such an anti-stellar mood.  Hopefully a good night of sleep will set me right.

Earthlings

This is a cursory post but I wanted to stop in.  I didn’t eat a single veggie today, but I also just didn’t eat much in general.

While studying on campus I drank a frozen coffee with coconut.

After my test I went with Adam to Jamba Juice for a Pink Star smoothie.

Before class I grabbed an everything bagel with cream cheese.

And on the way home I ate a bag of chips.  [I realize my food choices today won’t be winning any awards]

And that was it.

Dinner didn’t happen.  In spite of the warnings from fellow bloggers about it’s graphic nature I decided to watch the trailer for Earthlings WARNING Clip plays immediately.  I think the movie is a great idea and I’m glad that a lot of cities have been having showings recently.  But for me it was not a good idea.

I know how animals are treated in factory farms.  I wouldn’t eat mammals regardless, but I recognize that if I can’t see the process for fish and fowl then I shouldn’t be eating them.  I do, however, disagree with conventional meat (fish/fowl) production which is why Adam and I are going to make more of an effort to purchase ethically.

But I do not believe in the fur industry.  I have never believed in the fur industry, I’ve always been staunchly against it.  I’ve said for months that Kanye West is a monster.  I do not need to learn more about the fur industry, there is nothing that could convince me to be more against it than I already am.  So seeing clips of animals within the fur industry was not a learning experience for me.

I cried for 20minutes.  I’ve described the exact process I watched, in detail, but actually seeing it was heart-wrenching for me.  Of course I was bothered by the clips of the farm animals and seals, but when the video reached the part with the fox I felt like an elephant was sitting on my chest.  Watching that clip was genuinely the worst I’ve ever felt.  Adam sat on the couch and rubbed my back and he told me later that he’s never seen me react to something like that before (and we’ve been through some pretty hard experiences).

Sometimes the fact that human beings are so awful just makes me feel hopeless.  Like there’s nothing I can do that will be good enough to counteract all the bad out there.  On some level I really do believe in a balance of positive and negative energy, so modern humans scare me.  How can we put so much hate into the world?
