I’ve Missed You!

Did you miss me?  This week has been crazy with schoolwork and boring in bites; it was actually the perfect time to not be blogging!  My computer should be back in good health early next week but the husband agreed to let me use his computer (he finished the paper he was working on which – obviously! – took precedence over blogging) so I should be posting regularly after this evening.

Some of the things you’ve missed?

  • my brother-in-law is coming into town this weekend for a visit!  He’s actually here to watch “Immortals” with the husband since Adam drove over Ohio last month to watch “The Thing” with him.  They’re insane, clearly.
  • I set an alarm for 11:10 yesterday so I was sure to get in a wish at 11:11 on 11/11/11!
  • we had our first snowfall yesterday.  Only for a minute or so, it didn’t even last long enough to settle on the ground, but I was glad I happened to look outside just in time.
  • some neat baking projects.  Be on the look-out this upcoming week for some fun recipe posts!

Did you wish on 11^5?

The Pros And Cons Of Winter

Readers in the Buffalo State College area; my class is holding our Chili Sale today from 12 – 1pm in Caudell Hall.  $5 for chili, bread, cookie, and a bottle of water.  We’d love to serve you!

things I’m dreading this season –

  1. Snow.
  2. Dealing with winter coats, especially fitting my purse over a bulky shoulder.
  3. Having to pay $400+ that we don’t have to get the snow tires put on my car.
  4. Not being able to workout outside.
  5. Slipping and sliding all over the ice.
  6. Getting out of the shower into the cold.

things I’m looking forward to this season –

  1. Snow.
  2. Cute scarves.
  3. Building a snowman and throwing snowballs.
  4. Pretending to “smoke” when it’s so cold you can see your own breath.
  5. How comfy my Uggs are.
  6. Thanksgiving, Hannukah, Christmas, and New Years.
  7. Finding a sweater for Webster.
  8. Catching snowflakes on my tongue.
  9. Warm, cozy beds on cold, cold nights.
  10. Frosty, Rudolf, and the 12 days of Christmas.
  11. Cinnamon-scented candles.
  12. “Snowfall Kind of Love” by Ingrid Michaelson.
  13. Peppermint, gingerbread, and eggnog!

My pros list is longer than my cons; bring it on Winter!

What are you dreading/anticipating this season?

Too Busy For A Saturday

Oh man.  I’ve been “on” for 14 hours straight so please forgive me if this post is “off.”  I spent several hours on campus this afternoon and I’ll spend most of tomorrow there as well so I’m warning you in advance that Sunday’s recap will be cranky!

Today’s plan included three main objectives –

  1. Attend a training at school.
  2. Get all the shopping for Chili Sale cooking completed.
  3. Bake amazing muffins to help thank classmates for coming into school on a Sunday.

The training was actually for a job, thank goodness.  A short-term one though; I’m going to spend the next month working as a caller for the Buffalo State College alumni donation effort.  10 – 2pm today was spent in training sessions for the upcoming first week of work.

I didn’t have much time in the morning (I was trying to maximize sleep!) so I packed this NuGo Organic Double Dark Chocolate Bar for breakfast.

The NuGo people knew what they were doing when they stuck these samples in our HLS bags; every bar of theirs I’ve tried I plan on buying for myself!  This wasn’t as good as Balance Bar Cookie Dough (what is?!), but I liked the crunch and chewiness of the inside and the chocolate coating was sweet without being too sweet for breakfast.

I bought a sandwich for lunch on our break.

This was a book store cafe paninni with pesto, roasted tomatoes, and mozzarella.

Plus an Earl Grey with skim milk.

When I left campus at 2 I headed straight to the store to meet up with some classmates in the Chili Sale group.  We had to go to Wegmans, then BJs, then back to Wegmans again, but I think we are ready for tomorrow.

I bought a coffee with skim milk while we shopped.

And very happily accepted this chocolate sample with my beverage.

Guylian shells are my favorite chocolate candy of all time and they are pretty pricy so this 2-piece freebie put a huge smile on my face.

That smile was promptly wiped off as our hunt for dinner turned into an epic journey.  I got the first half of my work schedule for the week and it required some meal plan switching so we decided to go out.  But we don’t have much (any?!) money right now so we agonize over how we spend it.  Nothing is good enough to justify the expense and the dining options in Buffalo just aren’t that good to begin with.  Adam and I wasted a good hour driving around from vetoed, to closed, to 40 minute wait-listed.  We finally ended up at JP Bullfeathers and decided just to split two of the cheaper options.

I ate 2/3 of the Julius Caesar;

a salad with sun-dried tomato Caesar dressing topped with crab and rock shrimp salad.

Plus 1 triangle of Adam’s grilled avocado quesadilla,

which had cheddar, jack cheese, and roasted poblanos.

Mine was better 😉

Dinner wasn’t as filling as I would have hoped though.  I did a few nibbles whilst baking, plus I noshed on this bag of Combos.

These weren’t bad but I think my thing is finally over.

When we got home around 9, we finally got to baking.

I don’t have the time (or energy) to tell you about these muffins now, but I promise to blog the recipe soon because it’s a good ‘un!

Thank you to my amazing husband for playing medical intern to my lead surgeon (ie holding bowls, laying out supplies, and wiping my brow); without whom my baking project would probably still be underway.

Confession # 1 –

My professor told this joke the other day:

“What do you call a person who talks when no one is listening?

A teacher.”

I laughed so hard I choked.

Confession # 2 – In spite of not being in front of a classroom for 3 years now, I still have my “teacher voice.”  The other day I was explaining some material to a group of friends and a classmate sitting nearby remarked that she could tell just from my mini-lesson that I used to be a teacher.

Confession # 3 – Sometimes I’m really sad that I’m not a teacher any more.  But then I remember that every nightmare (like sweaty, shaky, wake up and thank God it was just a dream nightmares) I’ve ever had has been about teaching.

Confession # 4 – When I’m in group assignments I have a pesky habit of assigning my group members tasks.

Confession # 5 –  Sometimes I look at the other students on campus and think “I am not your peer.”  And then I remember that considering my age and background I should be their teacher. This makes it especially hard not to shush them in the library.

Confessions VIII

Click here to read Confessions part I, II, III, IV, V, VI, and VII.

Confession #1 – When I was at Wegmans the other day, two different employees commented on my “accent.”  Aka my retainer induced lisp!

Confession #2 – It’s possible that I’ve accidentally trained Webster to respond to commands as Shit-Head.

Confession #3 – Food just tastes better when it’s cute.

Confession #4 – I rarely wear pants when I’m at home.

Confession #5 – For homework last week we had to make a list of foods we couldn’t live without.

Note the top of the list –

Anything you want to confess to this week?

Post Means After

I was poised for an early bedtime last night and just as I was about to get off the couch my phone dinged with a final e-mail regarding changes for the upcoming chili sale (<– a big, important class project).  So I spent another hour on my computer, scaling the recipes and creating a market list.  In total, the chili sale project involves creating, testing, choosing, and scaling recipes; advertising; budgeting; shopping; cooking; and selling chili.  Plus writing a summary paper afterwards!  Needless to say it has us all in a bit of a tizzy.

In spite of hitting the pillow after 11:30 I was able to keep my morning together with a little planning.  I slept fully dressed and when my alarm beeped at 5:20 5:40 6:00 all I had to do was slip on shoes and head out to my car.  I spent my workout on the elliptical with my notecards.  30 minutes, level 6 random.

I managed to shower and get ready quickly enough that I still had time to walk to school too, yay!  Plus, breakfast was already packed.  My jar of overnight oats was delicious; I always forget how much I enjoy chia seeds and their tapioca pudding texture.

We spent most of our 4 hour class discussing case studies, which were fascinating.  All of today’s related to pregnant women.  One subject was 15 (married!) and had dropped out of school and rarely left the house; another was living in poverty and pregnant with her fourth child, and the last was a socialite with disordered eating patterns who was still drinking heavily 6 months into pregnancy.  It was so interesting discussing counseling for all three women, but so frustrating too.  Some of the (imaginary) people you just wanted to smack, like the middle women who eats almost no fruits or veggies because her husband “just doesn’t like them,” or the final one who was thrilled with only gaining 2 pounds over the course of her pregnancy.  I’m considering working with WIC once I have my degree so this was more interesting to me than some of our food service discussions.

I stayed after class for a club meeting with lunch.

I grabbed a veggie wrap (lettuce, tomato, pickle, cheese),

plus a few banana peppers and chips which I ate within the sandwich.

When was the last time you ate a pb & j with chips crushed in the middle?

After I walked home and worked up an appetite folding laundry I ate the 2nd half of lunch, leftovers from last night’s dinner.  Actually, I was already reheating the bowl when I realized that the husband wouldn’t have dinner until late tonight and he can’t have take-out.  So I put that meal away for him.  I’m going to have popcorn instead, and perhaps a beer.

We’ve got some fun, last-minute plans for tonight; our friends could get us cheap tickets so we are going to Shay’s Theatre to see “The Lion King.”  I am so excited!  But I’ve also got to get studying for tomorrow’s test!  I’m not going to blog again this evening but I’ll see y’all tomorrow after my exam.

No Take-out ‘Tober

Bedtime was closer to midnight than my planned 9pm.  I suck.  But to be fair, it’s hard to motivate on the couch when you’re sitting next to this –

I’ve got a lot to do today (like all the stuff I didn’t do this weekend) so I made myself a heaping bowl of breakfast.

That’s 1/2 cup Wegman’s 0% Plain Greek Yogurt with 2 servings of GH Galaxy granola and some peach and red plum.

Lunch preview – Today I’ve packed a big Sweet Tango apple,

and a leftover serving of tofu quiche.

Both should be delicious.

Speaking of future foods; I have an announcement for this month…

No Take-out ‘Tober

For the sake of our waistlines and wallets, Adam and I are making October a take-out free month.

In the past year or so we’ve become way too reliant on buying food out and bringing it home.  Wegman’s hot bar, anyone?  It’s always expensive, and never healthy.  Of course there are times when eating pizza on the couch is amazing and necessary, but it shouldn’t be a weekly habit.  I really enjoy cooking at home and 90% of what I make is cheaper than what we would purchase out.  Obviously restaurant meals can be expensive and caloric too, but they come with atmosphere and experience.  We’ve decided it’s time to rein our take-out habit in.

For the month of October –

  • Wegman’s hot bar is off-limits.  Period.
  • No take-out of any kind may be purchased.
  • Restaurant meals are ok as long as they are eaten in the setting.
  • We don’t have to starve if there’s no food at home, but what we can go out and purchase is bread, turkey, and cheese; not pre-made Buffalo chicken sandwiches!

Does anyone want to join us for No Take-out ‘Tober?  Let me know in the comments if you (and your family) want to take part!

Chipped Chompers

As you can probably tell from the title, this is not a happy post.  I mean, it was a fine day and all, but it ended with a bit of despair.

My smart breakfast held me over nicely through my 1st 2 hour class; oats for the win.  I was ready for lunch by the time we reached break though.  Mostly because I knew in advance how darn good my sandwich was going to be.

1 slice of 2% provolone and 2 slices of Applegate Farms Honey and Maple Turkey on a  toasted Cinnamon Raisin Bagel Thin.

The turkey was delicious and the sweetness of the bagel totally made the sandwich.

I also packed a baggie of baby carrots but they were so slimy I couldn’t even eat them.  Thankfully my friend Rachel realized that we were burning through our glucose stores cramming for the exam and she bought us Rochers.

Got to keep that brain powered.

I also bought a caramel apple frozen coffee.

But it was disgusting.  I’ve had the drink before and I know it doesn’t usually have a strong aftertaste but it was too close to class time to get back in line so I just threw it out 4 sips in.

I used both of my breaks to study today and the test ended up going ok.  Not as well as I would have liked, but I probably should have studied in advance for that!  I don’t want to do “ok” this semester, I want A’s!  It is worth noting though that I finished our 77 question exam in 17 minutes.  I’m a test speed demon.  <– that was with checking everything twice

I had to stay on campus after our test was over and I was starving.  I turned to the vending machines for sustenance.

The dietetics’ building’s machines actually have some healthy options, but Clif Bars are $2.50 and honey mustard pretzels are $1 so you see how that went.

My late home-coming was because I had a job interview at 6pm (fingers crossed!).  I think that went really well but sadly then the evening took a downturn.

I ate my pretzels at 5  and then didn’t eat anything else so I was still starving.  The important point there is that at 7:30 I hadn’t eaten in almost 3 hours; that’s a key detail.  I came home and cleaned up the remains of the husband’s shoes (thanks a lot, Webster!), took the little monster on a walk, and was just catching up with Adam when I felt something in my mouth.  “I think I chipped a tooth.”  Adam told me to shut up – it’s possible I’m paranoid about my teeth and it wasn’t like I was currently eating anything – but did get out his otoscope.  And, confirmed; I chipped a tooth!  I chipped two teeth last year using my old retainers but tonight I basically cracked one of the previously chipped molars in half.  Ouch!

We had to cancel our hot, crunchy dinner and we also had to go buy Adam new insoles so while we were out we picked up Subway for dinner.

I got a 6inch veggie sub with pepperjack cheese, lettuce, tomato, red onion, lots of pickles, and yellow mustard.

And I also scarfed the last quarter of Adam’s tuna sub.

Eating was a little painful, but no worse than hunger pains or a day without veggies.  Bleck.

Have you ever chipped a tooth?  Any food suggestions (or warnings) until I can get it fixed?
