New and Exciting

Just before 2am last night I got completely caught up with all of my reading.  The sad thing is that I love the reading and find it really interesting so there is zero reason why I should have been behind in the first place!

In spite of sleep-deprevation I was pretty proud of my wardrobe choices, my outfit was actually inspired by a magazine article, something I never do (new).

but you can see what I was going for.

My layers might have been a bit thick though, by the time I got my coat on I felt like the kid from A Christmas Story.

For breakfast I grabbed a biscuit with a little honey.

And I realized I was getting nothing done quickly at home so I grabbed some snacks and headed to school an hour early to study there.

I ate the Kind Bar during Chem at 5 and it was great but sadly the grapes when straight into the trash.  I’ve been hearing for years how amazing frozen grapes taste but they made me gag.

To make up for my (overall) lack of produce I snagged lunch from the cafeteria.

A garlic wrap with lettuce, tomato, cucumber, alfalfa sprouts, banana peppers, black olives, and a little bit of sesame dressing.

I saved the banana for Anthro, alongside a large skim latte.

I was planning on attending a review session for the exam after class but I was the only loser who showed up so I told them to cancel it, boo.  I got lots of work done on my own but the large coffee might have been a bad idea, I was literally shaking!  I grabbed a snack from the vending machine to eat in the car in the hopes of evening out.

Soooo glad I tried this, this was a new brand to me and these are literally the best chips I’ve ever tasted!  They were so tangy, and ridged like Ruffles but super thick.  Plus, the bag had less than 200calories (comparable sizes seem to be 300+).

After classes I came home, picked up the husband, and headed straight to the gym.  My new playlist helped me power through my workout; it was a great mix of old and new music with a good range of tempos.

The plan was treadmill time but both my shins were killing me so I took several long walks to loosen them up.  In the end I did 52minutes, 4.5miles follwed by pt and some abs work.

Running killed my appettite, but I was hungry for ice-cream.  I tried a new product – Cyclops Strawberry Greek Style Frozen Yogurt,

in a (new) ice-cream bowl from my grandma.

I had a half cup (plus a little) serving.

This was delicious!  I loved the flavor although I wish it had been creamier, this was more like ice-cream than froyo.

In addition to taking a shower I also have to do my lab flow-chart for tomorrow morning before bed, gotta run!

Better than Bonobo’s

Today has been another mish-mash day.  I feel like this whole week is going to be crazy until I take my tests next Thursday and Friday.  It doesn’t help that my insomnia is back in full-force: going to bed at 10:30 meant falling asleep past 2am and waking up after 10.   Unfortunately, I actually haven’t even really started studying yet because the whole day has been swamped with errands. 

Thankfully we did have time for a bit of fun during those errands.  Like getting a Valentine’s gift from my parents when we went to the post office.

Veggies = steamed broccoli, squash, and mushroom.

Protein = a tiny bit each tofu, tandori chicken, and general tso’s chicken.

We enjoyed a treat post shopping, Green and Black Milk Chocolate Peanut Bar.

My parents have been raving about this ever since we gave my dad one for Christmas, it has carmelized peanuts and sea salt!  My portion-

My lunch was pretty small, especially since I didn’t have breakfast so I knew I needed a snack as well.  We turned this,

into this.

The world’s best smoothie contained the flesh and water from 1 young coconut, with 6oz of lowfat plain yogurt, half a tray of ice, a drizzle of honey, and a huge shake of cinnamon.

Mmmmn.  Seriously, people who want to try the coconut chai from Bonobo’s, make this!

The rest of the day is going to be some sort of mix of studying, cleaning, dinner and gym.  See ya later.

Coconut, love it or hate it?  I LOVE it!  I can’t think of a single application I don’t adore it in.

Walking Dead

Ugh, it’s a good thing I made two home-cooked meals today because that is about all I did!  I felt like a zombie all afternoon!  This post will be a quickie because frankly I don’t even want to think about it.

Afternoon snacks: Stoneyfield Pumpkin Pie yogurt.

I searched high and low for this item all fall and then it randomly showed up at the grocery store the other day before disappearing again.  I finally got to try it and all I really have to say is meh; real pumpkin stirred into Greek yogurt is much better.

And some Cedar’s pita chips with feta spread (YUM!).

Like lunch, however, dinner was a delicious homecooked creation.

Cocoa-Coconut Chilli from Eat, Drink, and Be Vegan.  In the year I’ve owned this cookbook this is the only recipe I’ve made and I still consider it a good buy!  The husband will not eat this (hence his pasta leftovers) so I only made a half batch this time.

Topped with a dollop of 0% Fage, some shredded 2% colby, and Siracha.  Delicious!

Dinner’s success didn’t distract me from the fact that my sweet tooth is annoyed with me and I am disappointed in myself, boo.  I’m going to go sulk, and hopefully get in bed before 10.

FEST Check-in, Day 3

  • Food- excellent!  Everything I ate today was homemade and healthy.
  • Exercise – zilch, although I feel like my body did need a day off.
  • Sleep – poor, per usual we stayed up, and slept in, too late.
  • Time management – terrible!  Who has a quiz in two days?  How much did I study this weekend?  Urk!

Sweet Serendipity

After my last post I grabbed my People: Style Watch and headed out to the gym.  The magazine was a total clock-killer, if I hadn’t gone so close to closing time I would have been totally motivated to keep going.  As it was, I did 35minutes on the elliptical.  My machine said that was worth 3.3miles but I was going at a pretty easy pace so I’m not sure how accurate that is.  When I got home I did 25more minutes of strength training, stretching, and pt exercises.

After a quick shower it was time for a dinner I’ve been looking forward to all week; I finally recreated the Summer Bries sandwich from Serendipity3!  Serendipity is my favorite restaurant on the planet – the atmosphere is fun and the food is fabulous!  Plus it’s right off Lexington, one of my favorite streets on the planet!  Serendipity is the spot I always would take visitors when I lived in the city: click on the links to see the recaps for some of those fun meals link 1  link 2.

I own the cookbook and even in my hands their desserts are amazing.  However, while most people go to Serendipity for the ice-cream, I go for the sandwiches!  My very favorite – The Summer Bries – is what I recreated tonight.

*Note – dinner was delayed by a mold problem, ugh! and I snacked on a few Cedar’s pita chips and feta spread.  No pictures because I tried to pretend it wasn’t happening*

The sandwiches turned out divine!  Whole wheat raisin pecan bread with 98% ff turkey, apple, alfalfa sprouts, brie, and homemade 1000island dressing.  They got gooey in a 400* oven and turned into perfection.  I had two smallish sandwiches,

Plus some oven-roasted brussels sprouts on the side.

Such a good dinner!  I demolished the sandwiches but I did put back some of my mountain of brussels sprouts.

We are watching the season 2 finale of Buffy the Vampire Slayer so the bedtime goal is 11 – 11:30.  Sweet dreams.

FEST Check-in, Day 2

  • Food – pretty good, my goal was never to skip meals out, just to cut back on the take-out and “box” foods.
  • Exercise – great.
  • Sleep – poor.  11am is not when successful people wake up!
  • Time Management – see sleep.

Double Question Time!

  1. I know the calorie counts are suspect, but do you trust the miles counter on the elliptical machine?
  2. What is your favorite street in the US?  As much as I adore Lexington, my heart is forever devoted to Lincoln Ave in South Beach.  I think Lincoln is the best spot for people (and dog!) watching.

Dinner

I hope you entered my giveaway, because I’m be fawning over Cedar’s some more in this post!  Speaking of giveaways, here’s a healthy one.  I was super excited about this dinner, I’ve been planning my Mediterranean Fest for a week!

All of the individual components were fabulous, and they melded together perfectly.

Mini whole wheat pita from Wegmans.  A serving size was 2 for 110 calories but one was more than enough.  I loved how doughy these were.

Collards.  The absolute star of the dish!

I steamed a 16oz bag of frozen collard greens then mixed it with 1/3 cup toasted walnuts,a drizzle of  maple syrup, and 3.5oz of chopped blue brie cheese.  The flavors went together so perfectly, I was in heaven with every bite!  The cheese was from Saga, something I’ve wanted to try forever and I’m glad I did.

Falafel.

I used half of the box, mixed with H2O, but decided to ignore the package directions and bake instead of fry.  After 25minutes in a 350* oven they were perfect.  Tasty as they were, the falafels were a bit dense, I ended up only eating 2 of 3.

Everything went together so well, the mix of textures and tastes was kind of a dinner thrill.  Plus, after all the junk I ate this weekend it feels really good to eat something good.

After dinner it was time for my final to do: the gym.  37minutes on the treadmill; it was good to add to my training log.

What is your favorite kind of cheese?  I tie between blue and brie so the Saga blend was perfection for me!

Late Lunch, Very Veggied

The lateness of my lunch post is well worth it; more than half my to-do’s are complete!  My new laptop is already starting to feel like “home” –

Volunteering went well and on my way out I used my lunch voucher to grab a large coffee.

I made a tasty mix of amaretto coffee, toffee cappuccino, and 2% milk.

If I got my fruits at breakfast, I got my veggies at lunch!  I made a tasty, Southwestern stir fry of sorts.  3oz of okra were chopped and cooked with some evoo, and s&p (charred),

and then I added 1/2cup of black beans to the skillet,

and finally 1/2cup of Cedar’s Edamame Salad.

The end result was so delicious!

The mix of textures and flavors was so pleasing and the warmth felt comforting after my treck through the blustering winds to do my errands.  Is there anything better than okra???

Since I’m soooooo out of shape I need a bit more fuel for my gym trip this evening but luckily I’ve got an afternoon snack (and a giveaway!) already planned.  See you then.

Simple is Sweet

It’s barely noon and it’s already been a quite tasty day!  Breakfast and lunch both prove how sweet simple can be.

Breakfast was Pineapple Chiobani topped with blueberries and a drizzle of organic agave syrup.

I don’t actually love blueberries, I eat them because I know how healthy they are, but this was delicious.  And I liked the agave better than my first try too.  The whole combo knocked my socks off!

Lunch was equally stunning.

This was the perfect kind of tasting plate.

Leftover grilled veggies and blackened chicken from dinner at Pano’s on Sunday,

1/3 of a sliced cucumber,

1/2cup Cedar’s Aegean Edamame Salad,

and 2T Cedar’s Artichoke Spinach Hommus.

Cedar’s just might be my new favorite brand.

In just a bit I’m heading to campus.  I have Anthropology and ChemII today, but I also need to return something to the bookstore and do a few things at the campus library.

We’re doing a gym visit when I get home and then we have something fun planned for dinner.

Do you take restaurant leftovers home?  Why or why not?  We always try to, leaving it is wasteful and usually they are tasty!

Finally!

Woo – who; today has been a rollercoaster!  I’ve gotten good news and bad news, but mostly Adam and I have had a blast on his day off.

Today was my first day back at volunteering and it was good to be “home” again.  I didn’t eat before I went and by the time I headed home my legs were actually shaking with hunger!  Adam and I made plans to go to our friend Benji’s house so we hit up a favorite neighbor of his, Wegmans!

I know the salad bar got jealous but the sushi was pretty fantastic.  I got the brown rice veggie combo with carrot, cucumber, and avocado.

Veggie sushi with brown rice is just so tasty!  I ate 3/4 of the package.

Wegmans has a section where you can bag your own candy so for dessert I got 50cents’ (tenth of a #) worth.

I ate an adorable gummi heart,

but mostly I stuck to sour worms.

I also tasted Adam’s Divine Bar, milk chocolate and hazelnut.

We had a fun time with our friends, we all played some rounds of Eucher and then Danielle and I studied while the boys shot zombies.

Sadly, when I got home the bad news started – my laptop is broken!  I actually typed this post on the husband’s computer.  Mine works ok for a bit but then the screen randomly goes black.  So frustrating!!!  My goal is to back up all my files by Wednesday and try to get a new one (which we can’t afford) this weekend 😦

I created a GoogleCalendar and a Todoist list for both of my classes today and my ‘puter issues made it take forever.  I started freaking out as the clock moved closer and closer to gym closing time but thankfully I managed to make it for a work-out!  My first, in fact, of many since my 1/2 Marathon is officially in 47days!

It was good to get back on the treadmill;  5min walk + 10min run + 2min walk + 10min run + 2min walk + 4min run + 2min walk = 3.1miles.  By the by, I’ve created a GoogleDocument to log my training over the next 7 weeks, you can check it out here.

Running often kills my appetite and my crappy sports bra gave me a killer neckache so I’m actually going to shower and haul myself to bed without dinner.  I hope everyone had a good MLK day!

What is your favorite kind of gummi candy?  I love anything sour but my all-time favorite is coke bottles.
