Chocolate Oats

Ever since my lackluster bowl a week or so ago I’ve been dreaming of this breakfast –

Chocolate Overnight Oats!  Last night I combined 1/3 cup Skim Plus Chocolate Milk with 1/3 cup oats.  This morning I added in 1/3 cup plain fat free yogurt and 1/3 cup blueberries.  Finally, I added a tablespoon each toasted walnuts and cinnamon chips.

Too awesome!  This bowl made me happy x 10.

We almost never buy chocolate milk but Skim Plus tastes amazing and is a pretty healthy treat.

Today is going to be more busy than awesome.  I’ve got foot surgery follow-up at 10:10 and since it’s near school I’m going to eat lunch on campus.  Then I have class from 2 – 6:30 (there’s a two hour break in there but I packed work) before I come home and go to the gym.

Front-Loading Fruits

It’s good to be back.  I missed you guys!  I’m not gonna lie though – the husband and I took advantage of the few camera free days and ate a bunch of crap (those of you who’re thinking “but you always eat a bunch of junk,” this was actually worse, gasp).  So this morning I front-loaded my day with antioxidant rich fruit.

First a tasty kiwi.

I love the taste of kiwis but eating them skin on makes me gag and removing the skin requires Iron Chef-like knife skills.  However, my Kiwi Bowl method works perfectly!

Next I tried this Siggi’s Pomegranate Passion Fruit.

The yogurt was disturbingly tart but topped with blueberries, half a minneola, and ~1.5t of agave syrup it was perfection.

A healthy start to the day is always energizing.

And I needed the energy.  Adam and I had lots and lots of fun this weekend, not limited to dinner at a new Vegan spot with Katie (me), purchasing/playing RockBand with friends (him), getting Adam hooked on Buffy reruns, purchasing my Bloggie Secret Valentine gift, and seeing “The Imaginarium of Dr. Parnassus.”  Whew!  All that didn’t leave much time for work so we actually set the alarms for 6am to finish homework this morning.

My homework is done but I have a long list of to-do’s for the day still:

  1. volunteering shift at the hospital
  2. errands – mail, bank, etc.
  3. a bit of blog business
  4. a bit of school business
  5. getting my new computer set up
  6. laundry
  7. a beyond necessary trip to the gym for training
  8. dinner

Yikes, I better get going!

More Nachos?

My burnt nachos were fabulous, but I just couldn’t get the idea of gooey cheese out of my head….So I made a second (smaller!) plate; hello tummy-ache!  I regret nothing!* (*said with a French accent)

I did NOT however, make nachos for breakfast 🙂  Ever since my fabulous overnight nog oats last month I’ve been dreaming about new overnight bowls.  I finally decided that chocolate milk would be the way to go.

Sadly, I bought this for nutritional stats and the flavor was lacking. 

(sorry about the janky images, I’m not happy about using the husband’s laptop for blogging)  I’ll trade a few more calories for more chocolate flavor next time.  Maybe soy milk?  Breakfast was still ok though –

1/3 cup each Almond Breeze and oats were put in the fridge last night and this morning 1/3 cup each plain nonfat yogurt and blueberries were added.

The plan for today includes housework, schoolwork, and some tv watching.  I want to make a real dinner tonight (you know, like a wife) so I’m moving the gym trip to earlier this afternoon.  Happy Hump Day!

What is your favorite kind of flavored “milk?”  I’m a skim-cow’s kind of girl, but nothing can beat Silk Soy Nog.

Simple is Sweet

It’s barely noon and it’s already been a quite tasty day!  Breakfast and lunch both prove how sweet simple can be.

Breakfast was Pineapple Chiobani topped with blueberries and a drizzle of organic agave syrup.

I don’t actually love blueberries, I eat them because I know how healthy they are, but this was delicious.  And I liked the agave better than my first try too.  The whole combo knocked my socks off!

Lunch was equally stunning.

This was the perfect kind of tasting plate.

Leftover grilled veggies and blackened chicken from dinner at Pano’s on Sunday,

1/3 of a sliced cucumber,

1/2cup Cedar’s Aegean Edamame Salad,

and 2T Cedar’s Artichoke Spinach Hommus.

Cedar’s just might be my new favorite brand.

In just a bit I’m heading to campus.  I have Anthropology and ChemII today, but I also need to return something to the bookstore and do a few things at the campus library.

We’re doing a gym visit when I get home and then we have something fun planned for dinner.

Do you take restaurant leftovers home?  Why or why not?  We always try to, leaving it is wasteful and usually they are tasty!

Blackberry Pie Bowl

Good morning all!  School start this week (even though I’m only in a couple classes) so this is finally a weekend rather than just another day of my work-less week.

I celebrated appropriately with some “blackberry pie” for breakfast.

Plain Low-Fat Stoneyfield Yogurt with .5cup blackberries and part of an agave cinnamon blondie.

Yums!  I sprinkled on more cinnamon a bite in and the results were de-lish-us!  I know blogland loves fancy oatmeal but I think I am more about loving creative yogurt bowls.

The rest of the day looks like lunch — movies — school work/organizing — dinner.

That’s What HE Said

Shortly after my last post, I enjoyed one of these –

Usually I wouldn’t boast about a pre-10am diet soda, but what I’m really showing off is the straw.

My mom bought me these reusable straws, with their own pouch!, for Christmas.  Now I can be green while slurping my favorite chemicals! 

I drink everything (water, milk, iced-coffe, soda) through a straw so this is a great area for me to look into reducing waste.  The straw didn’t feel too strange and I loved how cute it looked.  When I use regular straws I chew on the tips which the husband hates (wow, that got dirty in a hurry!) so maybe these will cure me of that habit.

Either way, the caffeine must have inspired genius because I had a great lunch.

I started with these Johnsonville Turkey and Cheddar Sausages.

I melted 1/2t Smart Balance Light over medium-high heat and then added 1/3 of a chopped green pepper and two chopped sausages to the pan.

Once everything was nice and browned I sprinkled on some Kernel Seasons Ranch seasoning.

Finally I topped the bowl with hot and chunky salsa.

Delish!  I really really liked the sausages, they had the best smokey flavor and the cheese gave a nice kick without being too goopy.

For dessert I had a 2% Pineapple Chiobani.

And now it’s off to the old chopping block, yikes!  I’ll be back for a tearful post this evening!

Tuesday Afternoon – Thursday Afternoon

My family’s Christmas Eve party is tonight and we’ve got lots of setting up to do so this will have to be kept quick.

Tuesday Afternoon….

After my last post Adam and I set out for some exercise.  We ran on the waterfront downtown together.  We did walk/run intervals for 40minutes.  I’m not sure exactly how far we ran but I burnt 450calories.

Adam and my parents made chili for dinner (which I’m really not a fan off, unless it’s from ED&BV) so I pieced a few things together.  Like a smoothie –

1/2 cup low fat cottage cheese, 1/2 cup pineapple, 1 small banana, splash milk, squeeze honey.  Topped with nutmeg.

My mom also reheated me a slice of pizza from the freezer, Adam ate all of my half from the other day so it was just plain cheese.

We went out for drinks with some friends but I was the driver so I stuck to diet coke.  We stayed out past 1 though, so we were a little sleepy the next day! 😉

Wednesday…

Our plan was to go study at our favorite coffee shop, but due to our late start and some unexpected traffic it just didn’t work out.  I was planning on blogging too, but I forgot my camera cord, doh!  We did get tasty sandwiches to eat in the car while we ran errands with my mom though!

I got a whole wheat wrap with sweet potato, goat cheese, spinach, and spicy hummus, YUM.

I was feeling really sick later in the afternoon (NOT because of the sandwich, spicy food does NOT seem to affect my stomach) so Adam made me this yummy tasting plate.

Thankfully I rallied in time for dinner.  Adam and I cooked for my parents and grandparents, who are down visiting as well.

Adam made a Real Simple recipe for roasted red pepper turkey meatloaf,

and I roasted up some okra and green beans.

My mom provided dessert –

A teensy sliver of rum cake a parent brought her,

and a peppermint chocolate cookie.

I ate a snowball a little later too.

And a cup of Eggnog’n Tea.

And then we went out drinking way too late for the second night!  Good times were had by all, but I did stick to diet coke again.

Thursday Morning….

I think the no-booze rule saved me last night because I was able to get up this morning and go for a run!  I did ~ 45minutes/490 calories, and ~3miles.  I did my pt when I got home before I dove into this –

holy food am I glad I can find the pineapple Chiobani down here!

Although I was probably most excited about this Carebear spoon I dug up!

Now as soon as we leave the library we are heading home to prep for the party.  There won’t really be dinner or lunch today, more like lots of snacking on really tasty things.  🙂

I probably won’t be posting again until after this weekend, so to all my readers who celebrate – Merry Christmas!

Monday – Tuesday Afternoon

Hello from sunny St. Thomas!  This will be the first of many recap posts since I only have computer access when I go to work with my mommy (my parents don’t have internet).

Things started up yesterday at 3:45am!! when we made our way to the airport.  The one benefit to leaving at that hour is we got to see the festive skyline in complete darkness.

Our flying day wasn’t so bad, we had 2 stops but at least everything went smoothly.  On stop #1 Adam bought Taco Bell at 8am!  I had one slice of his chicken quesadilla.

Our next flight was our long flight so I saved my eating for it.  I’m not gonna lie, I thought I was super clever to back a baggie of salad and a small container of Sabra Babaganuosh.

Yums, I think this is about as healthy as plane eats can get!

I also packed some sliced yellow bell pepper, cucumber, and Kerrygold cheese.

And I supplemented with a few buys from the airport store.  Dried bananas and cherries.

The price and nutrional stats on these were both pretty solid.

Any finally this 100 calorie pack of mini meranges.

They were super tasty and adorable.

I only ate about 3/4 of the pack though, for 100calories it was a LOT of food!

Our 2nd stop was Puerto Rico, which meant we had to take a teeny tiny Cesna Prop to get to St. Thomas.

I actually flew a plane that was just a little smaller for my last birthday so it was pretty fun; we were happy to be home though!

While we unpacked I ate a Dove Peppermint Bark candy.

And then we headed out to dinner at my parents’ favorite pizza spot.  It was dark, so you can assume the food was about 90% better than the pictures look.  Adam and I started by splitting a ceasar salad.

And then we all shared pizzas.  I ordered my half with – spinach, artichoke, pineapple, mushroom and no cheese.

Yums.

I was glad I went no cheese because I had room for a tasty snack when I got home.

and two small pieces of 7-layer bar (Hello Dollies for you Southerners).

And……..bed!

This morning was supposed to start with a run but I was just to exhausted, I need to get myself on a proper sleep schedule this vacation!  I ended up waking up around 9 for breakfast.

We spent the day running errands with my parents; my family throws a huge Christmas Eve party so there was lots of shopping to do.  Here’s what I snacked on throughout the day –

An apple,

and a seasonal gingerbread Cliff Bar.

I also grabbed this package of trail mix as we headed out to school.

Now Adam and I are headed down to the school field for this morning’s belated run.  The next few days will be a whirl of baking and presents so hopefully we can fit in a little bit of fitness!  See you soon!
