Carbs and Cola

I’m feeling much better today; thankfully I took aspirin early enough that I never developed a full-fledged migraine.  I got a lot of migraines as a kid, and often they would hurt so bad that the pain would cause me to throw up.  Thankfully the husband is really diligent about getting me medicine as soon as he sees me rubbing my eye.

I did, however, have a strong enough headache that the only foods that appealed to me were carbs and diet coke.  I just went with it and ordered a Turkey Grill (sourdough, swiss cheese, turkey, tomato, thousand island dressing) with fries from the bar down the street.

I also ate a small bowl of popcorn.

Two confessions – 1. I totally would have eaten more than that but we ran out; 2. I think it’s kind of hysterical that what I consider to be so small a bowl it’s hardly worth it is probably just a normal serving size to most people!

What foods sound good to you when you are feeling sick?  I’m pretty much always down for a CokeZero.  If I order a non-diet, clear soda than you know I’m really sick.

Fluffernutter x10billion

Oh yeah, that is a sunbutter and vegan fluff sandwich.  Think fluffernutter x 10billion.

I toasted two thick slices of country white bread, smeared them with sunbutter and ricemellow creme, and heated the whole thing in the oven until it got nice and gooey.

Eat More Fruit Tip # 5 – If you slice an apple in advance, keep it from getting brown by sprinkling on a little lemon juice.

It made for a perfect, grade-school-esque lunch, all I needed was an apple smile or some bumps on a log!

Other things happening today?

  • I dipped my spoon into the stewed tamarind at least 3times
  • I’ve been nibbling at the edges of the mac and cheese too

Snow White and the Seven Dwarves

Don’t get too excited, no fairy tales here!  The title comes from our movie choice for the evening, I’m not feeling that creative.

I wasn’t feeling all that creative with dinner either, I almost exactly followed the recipe.  “The recipe” was from Cooking Light, Sausage-Fennel Subs.  My teeny changes were –

  • substituted 1T evoo for cooking spray
  • added ~1/2cup red bell peppers
  • skipped the garlic (we really ought to buy garlic again, it’s in pretty much everything)
  • used only 1 slice (per sandwich) of 2% provolone

I also added double the amount of sausage but that was unintentional, we have a lot of leftovers.  Thank goodness it was tasty!

As planned, after dinner we headed to Dolci for dessert.

It wasn’t quite what I was expecting 😦  Although Adam did come home with a box of cookies.

Undeterred, we headed down Elmwood until we accosted a family with ice-cream cones and found out where they got them.  Delish it was!

Oh yeah!  I chose salted caramel and was not disappointed.

We ooohed and ahhhed over our ice-cream and drove around doing some apartment hunting before we headed home to the Dwarves.  I ate a huge bowl of popcorn that somehow escaped the camera.

Down in Lunch Lady Land

Why yes, I am posting at midnight.  Is it possible my sleep schedule needs a wee bit of work?  Perhaps I should grow up a bit and learn to not watch Buffy the husband all night prioritize?  I will keep this quick though.  Like super quick.

We had lab check out today, I ate a Cookie Dough Balance Bar during final exam review.  (18words, speed it up, Emily!)

Good God I love those bars!  Did not really dent my hunger though.  And my plan was to swim afterward but I didn’t so I ended up stuck at campus waiting for Adam.  I did a 40minute swim on Monday and my ears have been hurting, better safe than sorry so I’m not swimming again ’till this weekend.

While I waited I did hit up Starbucks.

Tall, non-fat, iced, cinnamon-dolce latte.  I literally had to tell the barista that I was aware that “my drink has too many adjectives!”  I almost was starved into an item from the display case but I was too excited about my planned lunch.

I decided to bring back taco salads.  This guy had a lettuce base with black beans, crushed blue tortilla chips, 2% colby jack, low fat sour cream, and homemade pineapple salsa.

Do that not just sound/look like the best salad ever?

Well it WAS NOT.  Holy yuck!  The lettuce was so bitter that I seriously gagged on it.  I did my best to pick off the toppings but I ended up having to throw most of it away.

Not surprisingly, I was still hungry, so I popped a frozen mac and cheese into the microwave.

Much better.

Whilst hanging out this afternoon I snacked on too much some of this Divine candy bar.

It had crunchy, but yet still juicy, pieces of dried strawberry all throughout, so yum!

Dinner looked like this –

I used a Cooking Light recipe for Almost Meatless Sloppy Joes.

The sauce was more Joe’s cousin James than full on, but still very tasty.  I used ground turkey meat, of course.

And for our side I did a quick saute of chopped okra, frozen turnip greens, and chopped turkey bacon.

Dinner was good, but Adam and I were mostly excited for dessert.

What’s that?  Oh, not much, just a toasted marshmallow milkshake!

The recipe comes from Rachael Ray Magazine, and yes it was amazing.  I did sub in reduced fat varieties though.

It is undeniably bedtime.  Sweet dreams!

What’s your favorite Adam Sandler song?  When his stuff was popular my parents wouldn’t let me buy the cds, which was ironic because I owned several Jerky Boys cds!

Late Night, Lady Business

I realize it’s a bit ridiculous that I’m blogging – let alone awake – at 1am, but I’m hoping this well serve as a ‘final shut down’ activity for my brain.  We got home late and I got into a homework productivity groove that I didn’t want to abandon for sleep.  After a solid 3weeks of slacking in my classes I’m ready to dive into the books again 🙂

I abhor when bloggers discuss their lady business online, but I need to mention mine to address the hungry beast issue.  I was starving again today.  After the 8th-million time I mentioned this to the husband he expressed some concern; both for my health and my ever-expanding-ass.  When I defended my hunger (No, it’s not just that I think it’s funny to see whether or not you’ll still love me if I get fat.  Yes I’m really really hungry.  No I really ate people food today, not just popcorn.  No I don’t have kidney disorder, stop being such a medical student!) I realized we had the same conversation last month.  And roughly the same time the month before that.  So, the point of that rambling paragraph was to share my hypothesis that my hunger spike is related to my cycle.  And now I’m ending the lady business discussion.

Breakfast was 1cup Kashi H2H with fresh raspberries.

I added a couple shakes from our cinnamon-sugar duck to keep things interesting.

And yes, I did use skim milk, I just wanted to snap a dry shot first.

Within 20minutes of breakfast I ate a salt water taffy.

<begin day-long snackage here>  And the last serving of TJ’s Gummy Tummies.

And the last of the lemon curd (~2-3T) with some Biscoffs.

The lemon + gingersnap combo sort of rocks my socks, I have several awesome dessert recipes whirling ’round my head.

I picked the husband up before class and stopped at Starbucks in an attempt to go green(x2).

For Tax Day Starbucks was giving free coffee to anyone who brought in their own mug.

Great idea in theory, not so great in practice – I spat out my one and only sip more quickly than you can imagine.  I am usually not a Starbucks hater but this was nasty bitter.  Thankfully the amazing array of snacks now available at the counter more than makes up for bad free coffee.  I snagged a package of Sahale BBQ Almonds to eat during Anthro.

Mmmn.  I adore Sahale Snacks, I haven’t bought them in ages but I mentally added them to next week’s grocery list upon my first tasty bite.

In between classes I ran some errands around campus with the husband.  Our travels to the copy shop led to the discovery of an adorable Japanese spot.

Bubble tea on campus?!?!  I’m not sure if it’s a good or a bad thing that I didn’t know about this until my 2nd to last week at UB!

Almond flavored milk tea with bobba = huge smile from Emily. 

I’m not really sure if it was lunch or dinner, but at 5pm I split a $5 Footlong with the husband.

My half, tuna with provolone.  Not the healthiest option from Subway by far, but the husband is kind of obsessed with them and they are pretty darn tasty.  Plus they are pretty much the only thing I really eat with mayo and I have one maybe once every few months.

I also snacked on a HUGE marshmallow dream (i.e. rice krispies from Starbucks) bar during Chemistry but it had to go unphotographed.  The boys near me were being rude and loud and I felt bad pulling out a camera with the professor staring at my section.

The reason for our late homecoming is that we had to head to the mall after class.  The husband has a strange obsession with dorky sports (he used to be a championship ping-pong player!) and we had to hit up Dicks so he could buy a myriad of rackets.  I don’t think the man has touched a basketball since high school but he now plays ping-pong, tennis, and squash on a weekly basis!

During my monster homework session (10pm – 1am) I snacked on a big bowl of fresh-cut pineapple.

*Note* I hate these long posts and my goal (at least for this weekend) is to go back to 3-a-days.  However, I’ll be at the hospital most of tomorrow for my bone scan so don’t expect to hear from me.  But do wish me luck!  🙂

An Even Better New Thing

TGIF!  Not having a job and all, weekends don’t really mean much to me lately, but today has been an exceptionally good day. 

Before I headed to the gym I ate a big spoonful of TJ’s SunButter.

As well as a mixed berry mix 1.

Tasty, but I split it with the husband so I wouldn’t be too sloshy.

I pulled out the new one-piece and headed to the pool for my first ever swim workout.  I was a little bit nervous but things ended up going great.  Growing up on an island, of course I’ve always known how to swim, but I don’t know how to swim swim.  I’m so slow!  True story: one time my friend Amanda realized we could move faster with her swimming and pulling me along by one leg than by swimming and waiting for me to catch up!

Today I did 32laps in 30minutes.  That’s 32 x 25meters or almost .5miles.  It felt great to be moving again!  Nothing could replace running for me but this might be one of my new favorite workouts.  Some thoughts –

  • they made me buy a swim cap (yes I looked ridiculous, yes I’ll post pictures next time) but I think some ear plugs might need looked into as well
  • I refuse to wear goggles too, but Visine definitely needs to be purchased
  • I alternated between breast stroke and freestyle but I don’t know how to flutter-kick at all; I was frogging it the whole time!
  • My leg hurt once or twice but overall I think this is a safe, great workout for my injury
  • I need to pack a change of clothes.  I thought I would just throw my yoga pants back on over my wet suit but it felt so awful I ended up just going commado!

When I drove home I couldn’t find a parking spot anywhere near our house.  I had to pay for a meter (which I need to refill or move at 3) and then make a long trek home.  On my walk I stopped in at Arbys for a diet soda and totally got suckered in by some good marketing – Market Fresh Pecan Chicken Salad Sandwich, with chicken, pecans, celery, apples, grapes, and mayo.

Yum.  I couldn’t help getting jalapeno poppers as my side.

Not the best or worst lunch ever.

I have to run, I need to go fill the darn meter soon!

Hump Day Slump

I’m just gonna be upfront about it: this post is going to be lame.  And I realize a lot of my posts have been lame recently, but this one really takes the underachievement cake.  It’s sort of not my fault, because my camera was randomly being finicky and low-battery.  But it also sort of is, since I only ate three (count them, 3) items today.  Tomorrow?

For breakfast I made Adam and I Green Monsters.

(For 2) 2cups frozen spinach, 2cups frozen strawberries, 2cups oj w. calcium + vitamin d.  I made this mix to appeal to the husband, but it did NOT appeal to me.  I drank the whole thing in spite of preferring the flavor of my original gm and ended up with serious acid reflux.

My stomach was super painful all morning and by the time I was finally hungry again I could only think about one thing – a turkey sandwich.  So I went out and got one.

A Turkey Grill, no bacon no butter on the bread, from Coulter Bay.  And yes, I ate the fries.

When the husband came home around 6 it didn’t take much arm-twisting to get me to agree to head back to Sweet Tooth.

If I’m really being honest, it was mostly that I’d been home all day except for lab and I wanted to show off my cute top!

Adam got a gigantic sundae (he tore into it so fast I couldn’t even photograph) but I opted for a bear cookie.

I didn’t even realize it was a Black and White Cookie, my very favorite, until I started eating.  My nickname for the husband is ‘Bear,’ so it’s possible I took out some of my marital tension on the cookie –

Whoops!  😉

I guess it’s a good thing I got fruit and veggies in at breakfast?!  Hope everyone else had a happy Hump Day.

Does your significant other have a pet name?  He’s Bear and I’m Mouse.  Gag, I know!

Something Fishy

I don’t think it’s just a Monday thing, there is definitely something fishy going on with my head-space.  I’ve been falling asleep more easily, but waking up multiple times a night, often just before my alarm goes off (often causing me to reset the alarm to a later time).  I’ve been totally distracted – my to-do list was practically untouched today – and getting out of bed feels like waking the dead.  I felt like I was peeling myself up at the late hour of 9:30 this morning.

My late wake up hour couldn’t interfere with my trip to the volunteer services office at the hospital though.  I ended up throwing jeans and a jacket over my nightgown!

I’m probably the classiest class-less person you know 😉

I wanted to speak to the volunteer office in person because I had to tell them I still won’t be volunteering until after May 7th.  I can only get to volunteering via a longish walk, and I’m pretty much useless there unless I’m running things up and down the stairs.  I felt badly, especially because I’m probably done with volunteering once summer school starts, but my leg was killing me on the walk there which helped me know it was a good decision.

On the way home I stopped into the gas station for a coffee.

I went with my usual half/half method – equal parts vanilla creme (unsweetened) and English toffee cappuccino (sweetened).

I want to say the caffeine gave me the study boost I needed, but it was more like I stared at my Chem book without moving for 1.5hours, grrrrr!  I did make an inspired sort of lunch.

I topped a everything bagel thin with 1 microwaved egg and a slice of buffalo wing cheese.

And I burnt some kale chips for a side.

Tasty, and I did manage to take some notes while I ate.

I need some advice.  This is my new $19 one piece from Old Navy –

Nevermind the fact that I clearly have been eating too many nachos, please tell me this suit doesn’t look completely ridiculous in a sport-swim capacity??  I’m planning on heading to the South Campus gym pool this Wednesday to make like a fish.

I had to pick up some stuff – dry cleaning and the husband! – but I ate another egg for some pre-workout protein.  This time hard boiled.

Today’s workout was less ‘exotic,’ by exciting in its own rite.  I slooooowly hiked up the gym stairs so that I could have a stretch/strength workout using actual equipment.  The gym was packed and I hurt my leg on the stairs, so we ended up working out for about 15minutes, but it was a nice idea!

After our “work out” we did take a walk.  Our tax refund came today and we were pretty pleased, so we took a trip to the bank and for some celebratory ice-cream.  I waited all winter to try out Sweet Tooth.

It was adorable, they had awesome looking cookies, and even had serving sizes that were ACTUAL serving sizes; we’ll be back!  I got a “baby” cup of cannoli ice-cream.

Delish.  It was marscapone flavored ice-cream with chocolate chips and pieces of cannoli dough.  I’ve never actually eaten a cannoli (I know, I know!) but I loved this.

Post-shower (and another intense staring off into space session, wtf?!?), we threw together an Easy Peasy dinner.

  1. I boiled 7oz dry rotini pasta according to the box directions.  In the last 3minutes of cook time I stirred in 7oz frozen artichoke hearts and 1cup frozen peas into the pot.  Then I drained the pasta/veggies and returned them to the pot.
  2. Meanwhile, I sautéed 1 chopped onion over medium heat.  When the onion was browned I added 2T butter,2T  flour, and 2T half and half to the pan.  I stirred and gave the mixture time to thicken.
  3. Finally I poured my onions and sauce into the pot with the veggies and pasta, along with10 oz boneless skinless canned salmon, and stirred to combine.

It doesn’t look like much, but for how simple it was this dish was tasty and healthy.  (Note – this recipe makes 4 servings)

As soon as my teeth are brushed I’m going to curl up in bed with a magazine and hopefully fall asleep pretty quickly.  I do not have time in tomorrow’s agenda for sitting/staring.  Sweet dreams.
