Put Up Your Dukes

I’m doing good work of my to-do list, but there is still much to do so this will be quick.

1st things 1st.  My gorgeous amazing perfect friend just went through a break-up and I am sending her love.  Just the other day, this friend and I discussed how silly it is that bloggers pretend to have *the perfect* marriage.  If you truly never argue more power to you, but I’m kind of a b**ch so I just don’t see that happening for me.  That said; the first few years of marriage suck.  The first few years of medical school suck.  Being unsure about what to do with my life sucks.  And my fabulous husband and I are angry bitter people, we can’t just do yoga and mentally picture the suckiness floating away in a bubble, we fight.  A lot.  In fact, the reason I got such a late start this morning is because we screamed at each other instead of going to bed.  But you know what?  I love my husband.  I love my marriage.  As life calms down and we grow up we will fight less.  But for now we fight, and that’s really ok.

Anywhoo, said fight meant I didn’t leave for coffee/studying until 10:30 this morning.  A PSA to my younger readers – When you are 24, and unemployed, and late, and low on laundry, you too will put on this for drinking coffee.

And it was gooood.  I was at The Spot again, so you know I got another Mike’s sandwich.

This was not so gooood.  I think I’ve finally kicked my Mike’s craving, this one had too much cheese and turned me off.  Not to say I didn’t finish it 🙂

This afternoon/tonight I need to finish my reading, work on homework, do some housecleaning, pre-make dinner for tomorrow and go to the gym.  Back to the grindstone!

Do you fight or are you a robot?  **totally kidding, I really am happy for people who are that mature

Huevos Rancheros

Skipping dinner last night left me ravenous this morning!  I knew I needed to remedy that with a big plate of stick-to-your-ribs food.

It was like Huevos Rancheros, but better!

  1. Chop 2 maple chicken apple sausages, heat in a skillet.
  2. Add 1T SmartBalance Light and 1/2black beans, season with salt and pepper.
  3. Meanwhile, stir together 2eggs with a splash of skim milk and a sprinkle chili powder.
  4. Add eggs to skillet and cook through.
  5. At the last minute, add 2oz chopped cheddar.
  6. Remove from pan and top with 2dashes Chipotle Tabasco and 1-2T salsa.

‘Twas good!

The reason I am up so early (for me) is because today is busy busy.  I have a doctors appointment at 9:30 (to deal with my ridiculous foot worts that are still there!!!) and then I have my first lab today!  It is supposed to run from 5-8:50 but we are taking a safety test, not doing a lab experiment, so I hope we get out early.  The doctor’s office is near campus so I’m going to go straight to school from there, it will be a loooong day.  I’m going to buy lunch at school and I packed a snack.  Have a great day!

What is your favorite way to eat eggs?  I adore sunny side up with bread for dipping, but lately I’ve been all about salsa on everything.

Hungry Eyes

Good evening all!  I know I said I was doing a lunch post, but I was supposed to do a lot of things, and instead I slept.  🙂  I did get some of my to do’s finished, but all my kitchen work got pushed back in favor of a nap.

For lunch I did a replay of the best salad ever.

Did I mention that I microwave the whole thing?  I think that is what makes it so fantastic.  I used bit little bit more hot sauce, salsa, and cheese than the last time 🙂

I was still super hungry after my first lunch (I told you I get ravenous when I’m feeling sick!) so I made a Flat Out, stuffed with melted cheese.

Class this evening went pretty well, I’m pretty psyched that I still understand everything she is talking about!  When I got to campus I was still starving so I stoped at Jamba Juice for a 16oz smoothie.  I got a Caribbean Passion, and it tasted like apple juice.  Apple juice wasn’t listed in the ingredients and I hate apple juice, I had to throw it out 1/3-in.  I hate that!  I find it very stressful to make the “wrong” choice with food.  Food court situations send me into a tizzy.

On the drive home I suddenly felt much better so I took advantage of the random burst of energy and went to the gym.  I had 3miles scheduled so I cranked up the treadmill.  Today I put the incline on .5 to (slightly) approximate running outside.  With warm up/cool down I did 3.5miles and 35minutes.  Afterwards I did some abs (70reps) and stretching.  All total: 43minutes, 441calories.  I am loving my great playlist, I listen to it in the car everyday too!

After my intense hunger all day now that it’s finally dinnertime I’m not even hungry!  If the feeling strikes after my shower I’ll make something, but either way I’ll see you in the am!

When you are under the weather do you end up eating more or less?  I feel like my hunger is always the opposite of normal, sickness makes me ravenous!  Plus I get way more hungry in the heat and have no appetite when it’s cold.

Hello, Again

What a week it’s been!  But today it was finally time to rejoin the world of the living.  I got in bed before 10 last night but I didn’t get much sleep because I slept so terribly.  Still, at 9am I pushed myself out of bed.  I put on my workout clothes but I was feeling a little light-headed and our water was empty (we have a Brita filter pitcher, when we refill it we have to give it time to drain through the filter) so I decided breakfast and computer work were in order first.

The husband texted that he would go to the gym with me so I messed around and did business e-mails waiting for him.  For lunch I ate a sliced apple with leftover cheese,

The chips are leftover from our get-together last weekend, we clearly need to go to the grocery store!

And now Adam is home and we are headed out to the gym.  See you this evening.

Party Pooped

Good morningafternoon!  The get together was a success, but now the husband and I are all pooped out 🙂  I didn’t get to take pictures but we had wine and cheese, and I made baked Brie and spinach and artichoke dip (recipes below).  Everyone brought a wine or cheese and everyone had a good time.  I got pretty drunk (don’t worry mom, I was still a good hostess) but I managed to be calm with the cheese.

People stayed from 7-12ish and then we cleaned up and went to bed.  We ended up with leftover wine,

Once I quit drinking I chugged an orange Ooba, which was the perfect way to end the evening.

Today we slept in for-ev-er, and then woke up to eat lunch and watch “My So-Called Life.”  I made a tasty looking salad, but then there was an incident with a bug, so brunch ended up being this –

Baked Brie

Top a round of brie with chopped walnuts, dried cranberries, and a dash of salt.  Bake in a 350* oven for 15minutes.

Prep = Snap

Since I started to prepare ingredients yesterday making breakfast this morning was a snap.  All I needed was a pan and 4 eggs.

For two servings I used (approx) 2C kale, 2t evoo, 2oz extra sharp cheddar.  Look at those yummy greens.

Lunch was less than stellar in the greens department for the second day in a row.

Who could pass up buffalo chicken pizza?  The vouchers we get wouldn’t cover pizza and a salad and I’d rather not spend my own money at the hospital.

Volunteering went well again, although I wish I had more to do.  I’m there 6hours a day and they don’t go by very quickly!

When I got home I made the afternoon snack of artificially flavored champions.

Diet cherry flavored colas are my favorite kind of soda.  I bought the candy – Kazoozles, which were like Twizzlers filled with goo and made by Wonka – at the gas station yesterday because pink lemonade totally caught my eye.

Tonight is Adam’s semi-formal.  I’m not planning on taking pictures – tonight is his night, it’s not the appropriate time to explain about the blog – but I will do a full recap.  I will definitely take pictures of my new dress though.  See you when I get home from the ball!

I’m in love, I’m in love, I’m in love!  If I could run off with a smoothie without hurting Adam’s feelings I would, but more on that later…

Our errands went ok, we have to go back to the post office tomorrow but we dropped off our donations at Goodwill and got the things we needed at Target.  I also got majorly suckered into some candy –

York Patties used to be my favorite candies and an ad in a magazine at Adam’s doctor’s office totally got me craving one – way to go former communication majors!  I also ate some of the husband’s mini truffles (x3).

For dinner we made AnTEAoxidant Pasta (my name, recipe courtesy of an old Self magazine).  So good!

AnTEAoxident Pasta, serves 4  (I made some changes to the recipe, mostly to make it lower fat and to accommodate our lame pantry, so I’m posting the changed recipe below)

  • 6 green tea bags
  • 2.5C dry ww penne
  • 2C chopped broccoli
  • 2C chopped kale leaves
  • 1 14.5oz can fire roasted diced tomatoes, undrained
  • 3/4C fat free ricotta
  • 4t evoo
  • 1T balsamic vinegar
  • 1T chopped garlic
  • salt and pepper to taste

>Bring 6C of water to a boil in a large saucepan.  Add tea bags; turn off heat and let steep for 5minutes.  Discard tea bags and bring back to a boil.  Add pasta and cook according to package directions.  Add in broccoli and kale in the last three minutes of cooking.

>Meanwhile, in a large bowl, combine tomatoes, ricotta, oil, vinegar and garlic; mix well.  Drain pasta and cooked vegetables; add to bowl and toss well.

It was good, but nothing on this Earth is as good as this smoothie –

  • 1small banana
  • 1C Goya frozen soursop pulp
  • 3/4C So Delicious unsweetened coconut milk

Soursop is so good, it is my favorite childhood taste memory.  Legend has it that soursop makes you sleepy which is the idea tonight.  We are watching more “My So-Called Life” and then I am trying to get to bed by 10.

What is your favorite childhood taste memory?  Mine is soursop juice and baked macaroni and cheese from the old grocery store back home.  When I went out shopping with my parents around lunch time my dad would buy it for me and I would eat it with my fingers in the car!

New Things

In a major change from our apartment in Brooklyn where it was stiflingly hot, I overslept this morning because I couldn’t sleep last night because I was too cold!  I will never complain about lower temperatures though, I can always add layers, in Brooklyn I would have had to peel off my skin!

In spite of my late start I’ve managed to get most of my to-do’s for the day completed.  We did a little bit more apartment organizing (almost done!) this morning and then I ate a juicy black plum before we headed out.

We drove up to the North Campus of UB, my campus, today to get our id cards and it accounts.  The campus is a 20minute drive away which means I will have to be careful to schedule my commute around rush hours.  My class is all at night anyway though.  We needed money for the meter so we stopped at the campus Starbucks and I got an unsweetened iced coffee with skim milk.

On the way home we stopped by the public library.  I can get a card yet because I have no mail addressed to me (you have to show proof of residency) but I am super excited to go back, it was HUGE!  They even had a Mark Twain room 🙂

Now that we are home I’ve been doing all my school/business things on the computer and eating a late snacky lunch.  First we cut into this bad boy (my hand is there to show the size) –

This was a Crenshaw Melon.  I couldn’t really tell the difference taste/texturewise between this an a cantaloupe but it was fun to try something new.

Ours was a little too ripe so I ended up throwing out part of my last slice, I think we will have to use the other half for smoothies.

Next I ate a low-fat cheese stick.

It was so tasty it even looked enticing when stirred to mush.

In a bit we are going for a run (the same route as yesterday to see if maybe it doesn’t conquer me this time!) and then the plan for tonight is a low key dinner.  Lates!
