Don’t Go Chasing Waterfalls

Warning – if you make it to the end of this post, you’ll have to pee.

I knew I wasn’t up for the gym this morning but I also knew I wasn’t up for more than one cold walk, so I had Adam drop me off at school on his way anyway.  I made a pitifully small amount of notecards in that time, but some is better than nothing.

It was at school that I had cup of tea #1 (blackberry sage black tea) –

And cup of tea #2 (apple cider black tea) –

When I got home I made a smoothie for lunch, 1 frozen banana + 1 cup frozen spinach + 1 cup oj.

Sadly it was the worst green monster I’ve ever made, but I drank it all anyways to get in the greens and vitamin C.

Popcorn also sounded good,

and you can’t have popcorn without a diet pop.

I also had an onion bun with Smart Balance Light.

I should have a fun dinner to post later, if I haven’t floated away yet!

What do you prefer to drink when you’re sick?  Generally I’m more of a ginger ale than a tea person, but today I was feeling the hot liquids (obviously!).

Furtive, Unfathomable, and also Enigmatic

I’ve been away from the computer all day, it feels good to get back!  Only for a minute or two though, I’ve got a major exam tomorrow!

I think I’ve also got a cold.  Not to worry, I still blame all my tiredness on inconsiderate barking dogs, but I’ve got some definite sickness symptoms as well.  My interview went great (I don’t want to get into more for privacy reasons) but the minute I left the office I was practically shaking with exhaustion.   My neck/throat are so sore and puffy too.  Not to worry though, the husband decided that with my swollen nodes I look like a bullfrog when I shrug my shoulders; this has delighted him to no end all day long.

Thank goodness Adam didn’t have school today, he could drive me to and from my interview, and also to Wegman’s for a study session.  Thank goodness I packed a comfier outfit than my suit to change in to.

Not so great was that forgetting my socks meant I couldn’t change shoes; I felt like I was playing grown-up grocery shopping in heels.

And grocery shop we did (Wegman’s has the new Chobani flavors!), but first a study session and hot bar.

Even though the vegan challenge is over I still stuck with mostly veggies,

plus a little chicken for fun.

And when we got home hours later I snacked on another Bananas Foster Bar.

Seriously guys, make this recipe!  It’s like tasting Banana Bread and Coffee Cake’s wonder baby that could take over the world.

Dinner was delicious but secretive, I’m testing the recipe for a contest I’m entering and I can’t share.

Roasted brussels sprouts,

End With A Bang

We’re over vegan month.  Did I mention that yet?  The thought of eating those leftovers for dinner made me want to gag.

Actually what I’m really over is the barking dog; I’ve got a huge, important interview tomorrow and a test on Wednesday and I feel like a walking zombie.  I barely got a stitch of work done this afternoon, and it’s a good thing I decided I wasn’t in a dinner mood (ha!) because the thought of heating up a plate was too much.

But it is the end of an era month.  I like to go out with a bang.

Those are Banana Foster Bars.  They are vegan.  This is the recipe.

Let There Be Light

Okay, so I didn’t really do much work today either!  At least in the study sense, we did tackle some to-dos.  Really today was like my Friday, and the next two days are my weekend and my cram-like-crazy study days!

We had to tackle all sorts of not so fun stuff this morning, like filling our FAFSA and dropping stuff off at Goodwill.  My throat was feeling kind of funky so I never really got hungry for breakfast.  I did snag this grape leave from Adam’s leftovers.

And the husband and I split this Ring Pop.

There’s something wrong with my retainers (again, ugh!) so they’re out until Tuesday and it seemed like the perfect time to enjoy this leftover Valentine’s sweet.

Our next set of errands took us up to the Barnes and Nobel on Niagara Blvd, were we just happened to also pull over here –

There’s kind of a deficit of good Thai in Buffalo, so when we spotted Jasmine Thai we just couldn’t resist!

After a few quick modifications, Adam and I ordered our two favorite dishes to split.  Cashew Tofu,

and Pad See Eiw (with steamed tofu and without the egg).

Yuuuuuum.

True story?  I groaned every – single – time I took a bite of the broad rice noodles.  They are just so fricking delicious!  Chewy foods are my favorite and these are the ultimate doughy chew.

My only complaint about Jasmine Thai is that both of our meals were way too light on veggies.  Thankfully I took care of that by eating leftover sesame green beans in the car like a weirdo.

My throat still felt funny all afternoon so we postponed our dinner plans and I made myself a bowl of something creamy, cool, and sweet –

Banana Soft Serve.  Into the food processor went 1.5 frozen bananas, 2 Tbsp shredded coconut, 2 Tbsp honey roasted peanuts, and 1 Tbsp real maple syrup.

This dish is reason alone to own a food processor.  Buy one, try it, and then go tell Gena she’s a genius.

Getting Sappy

Did everyone have a good weekend?  I kind of took the weekend off (not from blogging, from everything – whoops!).

I’ve got a big day – a quiz I didn’t study for, a Valentine’s date – so I needed a big breakfast.

I reheated my leftover banana breakfast risotto – 30 second increments in the microwave with stirring – with raisins and a splash of Vanilla So Delicious.

Then I topped it with maple syrup and dug in.

Delicious!  I maybe went a little too big though, I definitely couldn’t finish the whole bowl.

We had a new bottle of syrup and I accidentally went a little heavy on the maple,

I didn’t really mind.

After breakfast I dealt with the other kind of sap –

Adam and I are pretty notoriously unromantic but I wanted to show him my appreciation for his participating in this month’s challenge with me, so I picked up some vegan goodies for him.

On the Clock

If i don’t want to be late to class then I have to keep this post quick, just like my morning workout.

I started my day with a speedy trip the gym.  I didn’t have much time, so I decided to work on my quickest mile.  1.5miles in 12:40, booyah!  I did a few minutes each of warm up, cool down, and stretching, and then I was outta there.  I can do longer workouts on the weekends when I don’t have to choose between the treadmill and breakfast.  Today I was on the clock.

Plus, I knew this breakfast was going to be a good one –

Banana Breakfast Risotto

  • 1 cup canned light coconut milk
  • 2 cups water
  • 1.5 Tbsp butter substitute
  • 2 medium bananas, chopped into bite-sized pieces
  • 1 pinch salt
  • 1 cup arborio rice
  1. In a small saucepan, combine coconut milk and water and heat to boiling.  Reduce heat to low and cover the pan.
  2. Melt butter substitute in a large pan over medium heat.
  3. Add bananas and saute until they turn a deepened yellow color.  Season with salt.
  4. Add rice to the pan and toast, 1 minute.
  5. Add approximately 1/2 cup of the liquid mixture to your pan.  The liquid needs to be at a low simmer, so lower or raise your heat accordingly.  Stirring constantly, cook until all of the liquid is absorbed.
  6. Working in 1/3 cup increments and continuing to stir, add the rest of your liquid to the pan until it has all been absorbed.

This bowl was so good.  Super chewy, and nutty, and just a bit sweet; swoon!

The Best Reason

I’ve got to keep this snappy, today’s a busy day.  In addition to it being my long day (classes from 11 – 8:40) I’ve also got a lot of on-campus errands to attend to.

Luckily I’ve learned that busy days aren’t a good reason to skip the gym, they’re the best reason to get a work out in!  Starting my day by working out gives me energy, gives my day a sense of purpose, and helps me have a sense of accomplishment all before breakfast!

This morning I headed to the gym for a treadmill workout.  I’m trying to balance not increasing my distance too quickly with building endurance, so I decided to run longer for slower.  I set the treadmill to 10mph and plugged away for 20minutes and 2miles.  5 minutes each of cool down and stretching and I was on my way.

I also prepared for my busy day by setting up my breakfast last night.

Sidenote – blog reading has given me major chia envy, so I was super excited when I found this bag of Bob’s Red Mill Chia Seeds on sale at Wegman’s the other day.

I decided to try them out using a method cobbled together from a few different blogs.

Last night – in a mostly empty jar of peanut butter – I combined 3/4 cup So Delicious Unsweetened Coconut Milk, 1/3 cup raw oats, and 2 Tbsp chia seeds.

This morning I added in a splash of Vanilla So Delicious and half a sliced banana.

The end result was fantasmic!

The chia seeds really did make a sort of vegan ‘yogurt’ and you can never go wrong with oats in a jar!

Caramel Corn Sounds Good…

I don’t know what my deal is because my hunger never abated last night and when I woke up this morning I was still starving!  Actually, what I was hungry for was butterscotch (and that was before reading Kath’s post); but that was clearly out of the question.  I went ahead and made a sweet and healthy breakfast plate.

A serving of Van’s Vitamin Boost Waffles,

topped with 1 Tbsp maple syrup,

a fresh banana,

a drizzle of Trader Joe’s Sunflower Butter,

and a sprinkle of my simply sweet granola.

This was so tasty!  The granola made the dish, you guys need to try this recipe!
