Savory Instead of Sweet

Hello, lunch-eaters!  My morning has gone well; it looks like the notecards won’t be finished until tomorrow but my labs are totally up to date.  My pumpkin pudding smoothie held me over well but I did snack on a bowl of red grapes while I worked.

By noon it was time for lunch.  When I received a Nature’s Pride sample as part of the Foodbuzz Tastemakers program I actually was sent two loaves.  I seem to hardly ever eat bread and I was worried that Adam would move too slowly and we’d develop a mold problem, so into the freezer one loaf went.  Once we were ready for more bread we simply moved the loaf down to the fridge and gave it a few hours to defrost.  This is a good solution if you find a bread(product) sale at your grocery store too.

With 12 Grain I made a yummy french toast, so I knew that would be good for 100% Whole Wheat as well.  But I was feeling adventurous.  Which led to…….

savory french toast!  I sanwiched sliced turkey, Crofter’s North American Superfruit Spread and dijon mustard between two slices of Nature’s Pride Whole Wheat.  Then I dipped the ‘wich in a mixture of egg/.5C chicken broth.  I cooked it for ~3minutes on each side in a pan with .5T Smart Balance Light.  Finally it got topped off with maple syrup, Chipotle Tabasco, and squeeze cheese.

Mmmn.  I loved this mess mix of flavors!  Next time I would leave off the sqeeze cheese (which I mostly ate around anyway), but we had it and it looked fun.  I doused it with hot sauce the the spice/egginess combo was perfection.

I am watching an episode of “Mercy” while I eat my lunch and then it’s back to work.  I think I will cook dinner before I leave for class, but I’ll post it this evening.  All that really matters is that I remember my lab goggles!

Pumpkin Pick-Up

I’m back, sorry for being flakey!  I’ve been feeling under the weather this week, as well as under-motivated.  I would say three days were enough though, it is time to snap back 🙂

I got up at 7 this morning and took a nice leisurely shower to start off my day.  Breakfast was all about Pumpkin Pie Through a Straw.

For this one I did 1C pumpkin puree, 1T maple syrup, 1/2C skim milk, 1serving plain fatfree Oikos, and a dash pumpkin pie spice.  It is super filling, and less than 300calories.  If you plan on making this yourself be warned – it is more like pudding than a smoothie.

I took a break from studying to write this post but now I’ve got to get back.  I’ve got lots of things I hope to accomplish today:

  • finish 2 sets of post-lab work
  • write my pre-lab for today
  • make 2 sets notecards for my quiz next week
  • eat up some of the fruit that’s all over the fridge
  • make dinner
  • recitation/lab at 5-8:50

…I’ll be back.  Class went well, I didn’t do much work but I did enjoy a long phone call with one of my best friends.  Adam and I are vegging out and watching Hulu and I’ll be back in the morning.

Hitchin’ a Ride

Volunteering went well and now I’m making a quick stop home before I head to school.  I have to wait for Adam to come home with the car so I figured I’d do a quick lunch post.

How do you get around?  If you have a car, is it yours alone or do you share?  Here in Buffalo I am 80% car 20% walking and I share a car with my husband.  In NYC it was 70% walking 30% subway, I miss that!

Healthy Cheese Eggs

Morning Monday!  I know most people have to go to work (I wish I was going to work!) but I feel much better now that the sun is up.  Even though Adam and I tend to stay up pretty late day to day, there are times when we are tired that we both get completely punch-drunk.  Last night was one of those times for sure.  It was only midnight when we were getting ready for bed but we were both shrieking laughing and bouncing around all over the place!  We’ve had a few similar experiences throughout the years, one time we stayed up all night before a flight and we laughed so hard I peed my pants!!!  That is actually one of my favorite memories 🙂

This morning pie was on the brain.  Maybe because I totally took two bites straight from the pan when I got to the kitchen?  But mostly because the recipe had called for 4 egg yolks and I had 4 whites leftovers to use.  I put the eggs to work for breakfast.

Along with the whites I stirred in 4T of fat free whipped cottage cheese, and seasoned with salt and paprika.  Then I cooked it all in 1t of Smart Balance Light over medium-high heat.  It was pretty yummy, Adam came up with the egg/cottage cheese idea yesterday and I think it works out while.

Alongside I had some fresh cut pineapple.

I’m heading to the hospital for volunteering now.  And I’m going to campus early to see if I can get some help with the lab report (I’m trying to write one for the lab I missed).  I hope everyone’s work week is off to a good start!

Tastes of Fall

Another productive day, I’m keeping my fingers crossed that the streak continues!  Plus, I’ve full-force started eating “October food,” another trend I hope to continue 🙂  After my breakfast post I attempted to do a  little work, but Adam and I realized we were way too distracting to each other at home,

so we packed up our stuff and went to a coffee shop to work!

All my diet soda talk in the last post got me craving one, so that’s what I had!

We were at The Spot, so you know I wanted a Mike’s Sandwich, but when I thought about all the food fun I had planned at home I decided to resist.  We studied for 4hours and I got a huge chunk of Chemistry work done. 

On the way home I had the husband drop me at the gym.  It was not so fabulous.  My foot still hurts and my calves were really really tight.  I really need to talk to a professional about strength-building/stretching exercises for my calves, knees, and hips.  In the end I did 2.83 miles on the treadmill, and tons of stretching, for 36minutes and 361 calories.

After my shower we closet swapped our summer stuff for winter duds.  Folks, we need to go shopping.  I have almost no winter wardrobe.  In NYC I dressed inappropriately and just dealt with being cold and uncomfortable, but that is not going to fly here in Buffalo (I’ll die!).  We scheduled in a big mall trip for next weekend – p.s. we budgeted for this already.

Then, the foodie fun began!  I made my first pumpkin pie through a straw of the season.

While I was drinking “pie,” I started baking pie!  I made a Maple Spice Pie from one of my favorite cookbooks, Pie, Pie, Pie: Easy Homemade Favorites, by John Phillip Carroll.  I used a Wholly Wholesome Organic Whole Wheat Pie Shell.

After an emergency run to the store things were back on track.  It had to set, so I started dinner before diving into dessert.  This combo came (basically) from the September issue of Health (recipe here).  Tofu and eggplant with cabbage over soba noodles.

I swapped tamari and worchestire (sp?) for miso and sesame seeds for sesame oil, but other than that I followed the recipe.  It was wonderful, I loved the soba noodles and the texture of the tofu was great.

I had more pumpkin alongside dinner, Wolaver’s Organic Will Steven’s Pumpkin Ale.

The pie was good, but super messy.  The inside tasted like caramel apples to me!

I took a huge slice and actually made myself a bit sick  😦  Now it is time for bed, I’ve got to get my sleep if I want another productive day!

The Change You Won’t See

Good morning!  The movie wasn’t as good as anticipated (it was much sweeter than we were expecting but not as funny) but I loved my Halloween Dots.  I also snagged half of Adam’s small popcorn and drank a huge diet coke.  I think my favorite part of the entire experience was the soda! 

Unless I don’t post at all for the day, I show you pretty much every single bite I put in my mouth.  I know some bloggers have a bar here or there that they don’t post but that’s not my style.  The only things I don’t show are –

  1. if I take a bite or two of the husband’s food
  2. vitamins – I take Flinestones Gummy Vites (shut up) 4-7 days a week
  3. non-caloric drinks; water and diet sodas

Previously I was having at least 1 (sometimes many many many more) diet sodas a day.  I realize that many people think diet soda is unhealthy, but I do most things healthy and it makes me deliriously happy which I think is a good trade-off.  I’ve thought about “quitting” diet soda over the years, and I’ve always decided that my happiness is a big part of my health too and therefore, for me, the diet soda is healthy.

However, as you know, I don’t have a job.  And in this economy (especially in Buffalo) I could not have a job for a while.  I’ve always been a big saver, so we actually are fine living off our savings and Adam’s loans for the next year, but we do have to be more careful with our money.  We made a budget last weekend and I decided that ultimately, it’s not worth the money to pay to have diet coke in the house.  So now I have to really really enjoy it when I buy one when I’m out 🙂

Today is another busy day.  I have some fun things I want to do this afternoon, but I’ve got to get all of my not so fun stuff out of the way first.  I have Chemistry work,  a quick trip to the gym, and today we finally need to switch out our closets for our winter duds.  For breakfast I had 1/2C whipped cottage cheese with 4oz fresh cut pineapple.
