Hello from Ohio

Howdy folks, happy Friday!  Sorry for such a late post, our internet has been going in and out intermittently and this morning it was finally just off.  We picked a great weekend to be at someone else’s house computerwise, right now I’m using my brother-in-law’s internet 🙂

It’s been kind of long crazy day.  I did manage to make it to the gym though.  Since dinner last night looked like this –

I ate a pack of Luna Sport Moons on the walk to the gym.

I then I did a quick 2miles (we were already running late) on the treadmill.  All total with warm up/cool down my stats were 2.3miles and 25minutes.  I was so happy to have gone but now my left leg hurts so badly.  I’m going to do a post soon talking about the running situation.

After a quick shower, and an even quicker packing session, we were on the road.  We got into Ohio right at dinner time so we met the family at a local restaurant.  I was so hungry I ate my fruit bowl before I even remembered to snap a picture.

Even though we were at an “American” style dinner (the rest of the family had bacon cheese potato skins and french onion soup) I managed to find a good vegan meal.

Roasted veggies with terriyaki sauce on garlic rice.  I demolished it.

My sil and niece actually had a small party to go to after dinner but my bil took Adam and I to pick up some movies and games.  We stopped at the grocery store for snacks and booze and I managed to pick up some produce as well.  I have a bag of snacks from homw though so I’m not too worried about the food situation.

As I write this I’m nibbling the other half of my vegan chocolate peanut butter rice krispie.

I might have a few snacks while we all hang out but I’ll do a recap in the morning.  I hope everyone’s week ended well!

What is your favorite diner order?  I order blintzes whenever I can, or a good tuna melt.  I’m also a big fan of handspun black and white milkshakes.

New and Exciting

Just before 2am last night I got completely caught up with all of my reading.  The sad thing is that I love the reading and find it really interesting so there is zero reason why I should have been behind in the first place!

In spite of sleep-deprevation I was pretty proud of my wardrobe choices, my outfit was actually inspired by a magazine article, something I never do (new).

My layers might have been a bit thick though, by the time I got my coat on I felt like the kid from A Christmas Story.

For breakfast I grabbed a biscuit with a little honey.

And I realized I was getting nothing done quickly at home so I grabbed some snacks and headed to school an hour early to study there.

I ate the Kind Bar during Chem at 5 and it was great but sadly the grapes when straight into the trash.  I’ve been hearing for years how amazing frozen grapes taste but they made me gag.

To make up for my (overall) lack of produce I snagged lunch from the cafeteria.

A garlic wrap with lettuce, tomato, cucumber, alfalfa sprouts, banana peppers, black olives, and a little bit of sesame dressing.

I saved the banana for Anthro, alongside a large skim latte.

I was planning on attending a review session for the exam after class but I was the only loser who showed up so I told them to cancel it, boo.  I got lots of work done on my own but the large coffee might have been a bad idea, I was literally shaking!  I grabbed a snack from the vending machine to eat in the car in the hopes of evening out.

Soooo glad I tried this, this was a new brand to me and these are literally the best chips I’ve ever tasted!  They were so tangy, and ridged like Ruffles but super thick.  Plus, the bag had less than 200calories (comparable sizes seem to be 300+).

After classes I came home, picked up the husband, and headed straight to the gym.  My new playlist helped me power through my workout; it was a great mix of old and new music with a good range of tempos.

The plan was treadmill time but both my shins were killing me so I took several long walks to loosen them up.  In the end I did 52minutes, 4.5miles follwed by pt and some abs work.

Running killed my appettite, but I was hungry for ice-cream.  I tried a new product – Cyclops Strawberry Greek Style Frozen Yogurt,

in a (new) ice-cream bowl from my grandma.

I had a half cup (plus a little) serving.

This was delicious!  I loved the flavor although I wish it had been creamier, this was more like ice-cream than froyo.

In addition to taking a shower I also have to do my lab flow-chart for tomorrow morning before bed, gotta run!

A Southern Feast

I’m trying to experiment with different mid-race fuels so I downed this Lemon Sublime Goo right before we headed to the gym.

Unfortunately I ended up having a frustrating, pathetic work-out.  I wanted to do the same treadmill interval set as yesterday but my legs were not having it.  My left ankle was killing me and my whole leg just felt week.  I ended up stopping at 24minutes (2miles).  Then I moved to the elliptical for 16minutes at level 6, hills.  Lame.

In spite of its patheticness my workout did leave me starving, I ate a spoonful of pb as soon as I got home.

After icing my legs and a quick shower I made a dinner that was so not lame!

Yummy chicken salad (recipe below),

buttermilk biscuits from this Cooking Light recipe, split with honey and Smart Balance Light,

and a side of sautéed okra.

It was my own healthy Southern feast!

I knew the okra and chicken would rock but I was seriously so impressed with how well the biscuits turned out; I’m a baker!  They were perfectly biscuit-y and healthy!

awesome chicken salad, serves 3

  • 12oz cooked chicken breast, shredded
  • 2T lemon juice
  • 1/3 cup plus 2T Miracle Whip
  • 1/3 cup toasted walnuts
  • 1 cup grapes, halved

What is your favorite chicken salad recipe?  I like this one a lot but I’m also partial to curried chicken salad.

Mish-Mash Day

Today has been a strange kind of mish-mash, backwards schedule day.  Apparently what we learned last night is that Buffy the Vampire Slayer reruns are a bad idea right before bedtime: I had the strangest dreams all night and I woke up very late, completely cocooned!  However, once I extracted myself from the bed sheets I got right down to business.

While I was organizing some school files (I have two tests this week!) I drank this Sugar Free Rockstar.

Actually, I stretched that baby out for a couple hours because I was still drinking it while I did house stuff with the husband.

We had a 3pm tax meeting with H&R Block, and when we got home I headed to the gym.  I have 30 days to get in cardiovascular shape for the half marathon while hopefully not hurting any of my various leg problems.  I’ve decided the best plan is to do several long workouts a week while very slowly upping my running-walking ratio.  Plus strength training will be key.

Backing up, pre-gym I snacked on some grapes and a KIND bar on the way to tax-dealings.

At the gym I did some running on the treadmill.  2/1 run/walk intervals x18.  With warm up and cool down my totals were 63minutes / 640calories / and 5+ miles (the treadmil shuts off at 60minutes).

Now, post-shower, we are heading to the mall to deal with buyer’s insurance and donate my old laptop to charity.  Speaking of good causes, are you wearing red today?

What do you do with your defunct tech stuff?  I try to donate or recycle everything I can.  Staples will even give you a gift certificate in exchange for used up printer cartridges.

Carb Craving

When my hunger did finally hit this afternoon it did so with a vengeance.  All I wanted was carbs.  We can just pretend I was carbo-loading for all that intense working out I do, cough cough 🙂

I had a bowl of Adam’s pasta topped with 2% colby.

And then a single-serving bowl of Frosted Flakes.

With some Kashi Go Lean Crunch to finish off the milk.

Around 5 we headed out to The Spot to do some studying.  I did dinner there.

Fountain diet coke and a Mike’s (egg and cheese) Bagel Sandwich.

I told myself that if I worked out once I got home (after 10!) I could eat a cookie, so I bought a cookie at the gas station on the way home to ensure that I wouldn’t shirk out on my work out.

I Netflix’d Crunch: Pick Your Spot Pilates.  I did abs, buns, and thighs for a 30minute workout.  As much as I enjoy this DVD, I think it is too easy for a “real” workout, I’m going to try to incorporate it more for stretching or mornings.

FEST Check-in, Day 4:  Most of this is N/A since almost fainting is clearly never in the plans.  I am proud of myself for getting in a work out though, no matter how small.

What is your favorite kind of carbs?  Mine is definitely NYC bagels, yum!

Sweet Serendipity

After my last post I grabbed my People: Style Watch and headed out to the gym.  The magazine was a total clock-killer, if I hadn’t gone so close to closing time I would have been totally motivated to keep going.  As it was, I did 35minutes on the elliptical.  My machine said that was worth 3.3miles but I was going at a pretty easy pace so I’m not sure how accurate that is.  When I got home I did 25more minutes of strength training, stretching, and pt exercises.

After a quick shower it was time for a dinner I’ve been looking forward to all week; I finally recreated the Summer Bries sandwich from Serendipity3!  Serendipity is my favorite restaurant on the planet – the atmosphere is fun and the food is fabulous!  Plus it’s right off Lexington, one of my favorite streets on the planet!  Serendipity is the spot I always would take visitors when I lived in the city: click on the links to see the recaps for some of those fun meals link 1  link 2.

I own the cookbook and even in my hands their desserts are amazing.  However, while most people go to Serendipity for the ice-cream, I go for the sandwiches!  My very favorite – The Summer Bries – is what I recreated tonight.

*Note – dinner was delayed by a mold problem, ugh! and I snacked on a few Cedar’s pita chips and feta spread.  No pictures because I tried to pretend it wasn’t happening*

The sandwiches turned out divine!  Whole wheat raisin pecan bread with 98% ff turkey, apple, alfalfa sprouts, brie, and homemade 1000island dressing.  They got gooey in a 400* oven and turned into perfection.  I had two smallish sandwiches,

Plus some oven-roasted brussels sprouts on the side.

Such a good dinner!  I demolished the sandwiches but I did put back some of my mountain of brussels sprouts.

We are watching the season 2 finale of Buffy the Vampire Slayer so the bedtime goal is 11 – 11:30.  Sweet dreams.

FEST Check-in, Day 2

  • Food – pretty good, my goal was never to skip meals out, just to cut back on the take-out and “box” foods.
  • Exercise – great.
  • Sleep – poor.  11am is not when successful people wake up!
  • Time Management – see sleep.

Double Question Time!

  1. I know the calorie counts are suspect, but do you trust the miles counter on the elliptical machine?
  2. What is your favorite street in the US?  As much as I adore Lexington, my heart is forever devoted to Lincoln Ave in South Beach.  I think Lincoln is the best spot for people (and dog!) watching.

Time Keeps Slippin’ Slippin’ Into the Future

I don’t know what happened today, time just slipped away.  Adam and I will be hanging out and all of the sudden it’s night-time and I’m sad.  I get so frustrated about not moving forward that I sit and stew and continue to not move forward!  Sometimes it just feels like I’m paralyze.

Fortunately the world’s best husband dragged me off the couch at 9:10 (the gym closed at 10!).  I started with some strength training – 100reps of abs, 80reps of legs, and 75reps of arms in various exercises.  Then I finished up with a quick jog on the treadmill.  With warm up and cool down 1.1miles in 12minutes.  I was glad I went, of course.

I actually decided it was too late for dinner, but I drove around with Adam while he got food, hence the late post.  I’ll have to have a nice big breakfast tomorrow!

FEST Check-in, Day 1

  • Food: Pretty good; I could have gotten in more veggies if I’d had dinner.
  • Exercise:  Success!  I got in cardio and strength training.
  • Sleep: Fail, it’s almost midnight and I still have to go shower.
  • Time management: terrible, as stated above.

Dinner

I hope you entered my giveaway, because I’m be fawning over Cedar’s some more in this post!  Speaking of giveaways, here’s a healthy one.  I was super excited about this dinner, I’ve been planning my Mediterranean Fest for a week!

All of the individual components were fabulous, and they melded together perfectly.

Mini whole wheat pita from Wegmans.  A serving size was 2 for 110 calories but one was more than enough.  I loved how doughy these were.

Collards.  The absolute star of the dish!

I steamed a 16oz bag of frozen collard greens then mixed it with 1/3 cup toasted walnuts,a drizzle of  maple syrup, and 3.5oz of chopped blue brie cheese.  The flavors went together so perfectly, I was in heaven with every bite!  The cheese was from Saga, something I’ve wanted to try forever and I’m glad I did.

Falafel.

I used half of the box, mixed with H2O, but decided to ignore the package directions and bake instead of fry.  After 25minutes in a 350* oven they were perfect.  Tasty as they were, the falafels were a bit dense, I ended up only eating 2 of 3.

Everything went together so well, the mix of textures and tastes was kind of a dinner thrill.  Plus, after all the junk I ate this weekend it feels really good to eat something good.

After dinner it was time for my final to do: the gym.  37minutes on the treadmill; it was good to add to my training log.

What is your favorite kind of cheese?  I tie between blue and brie so the Saga blend was perfection for me!
