Breakfast, Lunch, Junk

I’ll be honest, I’m still feeling a bit down.  My foot is killing me and I’m pretty pissed about not being able to go to the gym.  Plus I’m still feeling a bit under the weather, so I’m all-around blah.  This will be quick, and therefore, less whiney 🙂

Breakfast.

Stoneyfield Farms YoKids Lowfat Strawberry-Vanilla and Raspberry yogurts, white nectarine, and Justin’s Almond Butter packet.  I also added half a teaspoon of sunbutter.

It was good, but I was still hungry afterwards.  I had to drop of a prescription for medicine for my foot so Adam and I set off.  During our errands we split a small frozen cappuccino.

Our plan was to get lunch at Wegmans but the selection was pretty disappointing, no tofu!  I made do with a small plate.

Broccoli and green beans plus a little bit of general tso’s chicken.  I had been expecting tofu and this did not deal with my hunger, I was still starving!  We shopped quickly, and I ate this candy on the way home.

Plus I polished off 90% of these nachos from the bar downstairs.

I’m having a love affair with jalopenos.

I’m watching GhostWorld and I’m really not sure what I think of it, but I guess I won’t judge until it’s over.  See you for dinner!

Rocked It

Ahh, accomplishment, finally!  I didn’t get to bed all that early yesterday (I’m not saying anyone was drunk, cough, but Adam sure took a long time to get out of my way in the shower, cough cough) and I kept waking up all night, and then I hit snooze too many times this morning, but at 9am I did manage to actually start my day. 

I literally had not been to the gym in a week so that was clearly in order.  I prehydrated while I charged my i-pod and drank this Rockstar Juiced.

This flavor was nowhere near as good as the purple cans but it still made me pretty happy.

All I can say about the gym is – woot!  I don’t know if it was the awesome playlist, the energy drink, or the fact that since I haven’t worked out all week I have to squoosh to make my training plan but I rocked it out.  I did the treadmill, mostly running but with a warm up/cool down and a little Galloway Method towards the end.  45minutes / 4.4miles / 530calories.

After a shower it was time for breakfast.

While I ate I organized coupons, recipes, and our schedules to come up with a weekly meal plan and shopping list.

Here is what’s on the agenda for today –

  • grocery trip for regular restocking and fun (Within reason, I’m purchasing every product I’ve been eyeing in the organics section of the store.  I’ve been promising myself this ever since I knew I was getting my bonus check this year and I am very excited)
  • recycling
  • mild housecleaning
  • 2loads of laundry
  • schoolwork
  • fun foodie event this evening!

No Labor Day

Arrgh, I feel like a zombie!  I didn’t even get to go to volunteering today 😦  I didn’t get in bed on time, which is my fault, but I also realized last night that our pillows are partially contributing to the laying awake for hours issue.  I looked at the clock at 4:56 last night and was still awake!  Needless to say, I didn’t get up to study, but when I did get up for volunteering I had such a bad migraine that I called in and went back to bed.  I feel really guilty not going in, but I would have been pretty useless.

Once I did get up, breakfast was an adventure.  I wanted to use this awesome looking egg-cooker my grandmother got me for my wedding shower.

The plan was poached eggs.  The name of the product is “Henrietta Hen,” but 4 eggs in the trash later I was referring to Henrietta as more of a female dog than a bird!

I think the cooker will work great for hard/soft boiled eggs, but poached will have to be gotten from restaurants.  My last ditch, 3rd effort at lunch ended up pretty big.

with the leftover salad in the bowl it was mixed in.  I used –

  • 1can tuna, rinsed and drained
  • 1.5T Miracle Whip
  • 2T + pickle relish
  • 1 chopped celery stalk
  • healthy shake paprika

I also had a bowl of chopped pineapple and plumcot (a plum/apricot hybrid that rocked my socks).

Adam and I have been cuddling and watching Bones and I ate two sugar cookies.

MK sent these home with us from the bbq and they are pretty good, very soft (it’s possible that in between round 1 and 2 of the egg making I snatched one of these without photographing!).

Once Adam and I get sick of each other (just kidding!) I’m going to do some school work.  See you for dinner.

Sunday Sandwich

I’m a little late on my studying, but it’s been a good morning so far.  We woke up around 9 and managed to head the gym by 10.  My training schedule had me doing 2miles today but my legs were feeling very stiff so I knew to take it easy.  I decided to use the Galloway Method, 2minutes of running followed by 1minute of walking.  With warm up and cool down I did 2.5miles / 25minutes / 260calories.

Before we went I split a Cliff Mojo bar with the husband.

And when we got home it was time for lunch.

I made a sandwich out of 4 chicken nuggets, a hamburger bun, and 1T marinara sauce.

Plus I had some pineapple Adam cut for me while I was in the shower.

I’m still starving though, so I’m sure a snack is on the horizon.  Plus as soon as we finish our “My So-Called Life” episode (the last one ever, we are so sad!) I have to actually do some studying.  See you for dinner.

Do you ever do the Galloway Method?  I’m planning on mostly just running while I’m training for the half marathon, but it’s nice to give my joints a break.

Go Bare

Morning!  Thanks for ‘giving me the day off’ yesterday, it was busy busy busy with lots of mishaps so I needed a blog break.

This morning I tried this trio for breakfast –

1 kiwi, chopped; Stoneyfield Fat Free Plain Yogurt; 1t Crofter’s Super Fruit Spread, in North America with blueberries and cranberries.

So pretty!  The spread rocked my socks, but I’ve decided that fuzz-on kiwi skeeves me out too much; I ended up leaving about half the bowl.  I’m going to grab a small snack to eat on the walk to volunteering.  See you this afternoon.

What peels won’t you eat?  I don’t do bananas (obviously) but other than that I eat all fuzz-free skins.

Actually, first off should be how much I frickin’ love my readers.  I am so appreciative of all the supportive comments on the last post, you guys don’t even know!

It is way later than planned and some of my to-do’s still are not done…..is it obvious I’m the wife of a med school student the day before his first final? 🙂

I decided to recreate the best smoothie ever, only better.

Total success!  This was (approx) a 1/2C each of –

  • Goya frozen soursop pulp
  • Purely Decadent coconut milk Coconut ice-cream
  • So Delicious Unsweetened Coconut Milk
  • and a medium banana

The coconut made it even better, if that is even possible.  I took my smoothie on the go, along with Adam’s study sheet, and we took a long walk while I quizzed him.

I continued quizing once we got home, so I did quick and easy and ate this Lean Cuisine for dinner.

Delish, truly.  I topped it with a sprinkle of Parmesan but it would have been flavorful and yummy without it.

After *we* studied, I spent more time with the bread dough I think won’t work tomorrow and now I’ve got to shower and go to bed.  Sweet dreams.

Give Fuzz a Chance

This has to be quick because I am leaving to start my volunteering shift (from 8-2) in just a few minutes.  I skipped posting last night because I did (and ate) nothing worth mentioning.  I spent the rest of the afternoon on the couch with the husband, eating crap and watching movies.  It was glorious 🙂

This morning I made this bowl for breakfast –

  • 1 YoKids Strawberry Lowfat Yogurt
  • 1 huge, fuzz-intact kiwi
  • 1t peanuts

I’ve seen other bloggers eat kiwi au natural for years and I finally had to try it.  The verdict?  I prefer them clean, but for convenience sake this was pretty good.

I’m in love, I’m in love, I’m in love!  If I could run off with a smoothie without hurting Adam’s feelings I would, but more on that later…

Our errands went ok, we have to go back to the post office tomorrow but we dropped off our donations at Goodwill and got the things we needed at Target.  I also got majorly suckered into some candy –

York Patties used to be my favorite candies and an ad in a magazine at Adam’s doctor’s office totally got me craving one – way to go former communication majors!  I also ate some of the husband’s mini truffles (x3).

For dinner we made AnTEAoxidant Pasta (my name, recipe courtesy of an old Self magazine).  So good!

I had my portion with a big glass of iced h2o.

AnTEAoxident Pasta, serves 4  (I made some changes to the recipe, mostly to make it lower fat and to accommodate our lame pantry, so I’m posting the changed recipe below)

  • 6 green tea bags
  • 2.5C dry ww penne
  • 2C chopped broccoli
  • 2C chopped kale leaves
  • 1 14.5oz can fire roasted diced tomatoes, undrained
  • 3/4C fat free ricotta
  • 4t evoo
  • 1T balsamic vinegar
  • 1T chopped garlic
  • salt and pepper to taste

>Bring 6C of water to a boil in a large saucepan.  Add tea bags; turn off heat and let steep for 5minutes.  Discard tea bags and bring back to a boil.  Add pasta and cook according to package directions.  Add in broccoli and kale in the last three minutes of cooking.

>Meanwhile, in a large bowl, combine tomatoes, ricotta, oil, vinegar and garlic; mix well.  Drain pasta and cooked vegetables; add to bowl and toss well.

It was good, but nothing on this Earth is as good as this smoothie –

Soursop is so good, it is my favorite childhood taste memory.  Legend has it that soursop makes you sleepy which is the idea tonight.  We are watching more “My So-Called Life” and then I am trying to get to bed by 10.

What is your favorite childhood taste memory?  Mine is soursop juice and baked macaroni and cheese from the old grocery store back home.  When I went out shopping with my parents around lunch time my dad would buy it for me and I would eat it with my fingers in the car!
