Liver Spots

There were all sorts of goods and bads today but I’ll try to focus on the goods.  Like, for example, the fact that it’s Turkey Day week!

I went ’80’s style when I got dressed today, all I needed was my old Doc Martin boots!

Now that I live in Buffalo I wear sandals every day, but when I was growing up in the Caribbean I went through an intense Doc Martin phase.  I guess I like anything that’s out of season!

I was in desperate need of greens/fruits so I made a smoothie for the road.

1C frozen blackberries, a scoop of Chocolate Amazing Grass, and some skim milk.  I loved how purple it got!

I arrived at school really early so I walked around with Adam for a bit before heading to my appointment.

Fun fact #1 – my leg hurts like crazy.  Fun fact # 2 – according to the RN at the health center I have a varicose vein!  It’s not a terrible one, and at this stage my insurance won’t cover removal.  They are hereditary and my teaching career (on my feet nonstop from 7-5) is a big factor, as well as my years as a waitress. She said I need to wear support hose and supportive shoes, but wouldn’t give me information about how long that would need to happen.  If a month or so will ‘fix’ me then I’m all for it, but if it’s a rest of my life thing I’d rather keep with my sandals and just have the surgery when it gets worse.  I have an imaging appointment tomorrow to make sure I don’t have a blood clot and I’ll get more information then.

I’m not going to lie, it’s a good thing Adam drove me to class because I bawled all the way there.  I’m able to put up with a lot of pain, but having a yucky old lady problem pisses me off!  I don’t want to wear support hose!  I sort of lost it.  I think things will be better once I get more information tomorrow.

The good news is that physical activity can’t make it worse.  I try to be very careful of injury (that’s why I took time off when the leg pain started) because I would never want to permanently side-line myself.  However, I am ridiculously stubborn and am pretty good with putting up with pain.  I decided last week that I would always stop running if I would cause permanent injury by not taking a break, but that if I could safely run through the pain I would do so.  Therefore, 7 out of 10 leg pain be damned, half marathon training is back on!!

I recomposed myself once I got to campus, but definitely bought this bag of Jalapeno Cheddar Cheetos to ease my sorrows.

($1, Challenge Balance – $79.24 ) I ate about half the bag – go me for not just downing the whole thing.

At 6 I got more good news when Caroline showed up with her laptop, class was cancelled!  Adam was already at the gym with a friend so she offered to take me home.  We made a pit-stop at the mall (shopping for her bf) so that was fun.

Dinner was more good news.  Delicious, all around!  The first course was Dr. McDougall’s Soup.

Adam had Roasted Red Pepper and Tomato and I had Chunky Tomato.

I almost never eat ‘mater soup but I love it.

The second/main course was my newest creation.

Buffalo Blue Bean Patties, serves 4

  • 2 15.5oz cans black beans we use low sodium
  • 1/2 cup, plus 2T buffalo wing sauce we used the sauce from Anchor Bar, the birthplace of Buffalo wings
  • 2 eggs
  • 1 cup bread crumbs
  • 3/4 cup gorgonzola cheese crumbles
  • salt and pepper, to season
  1. Preheat the oven to 450*.  Foil and spray a baking sheet.
  2. Empty bean cans into a colander and rinse thoroughly – this is a heart healthy step, reduce your sodium intake.
  3. Pour beans and 2 cups wing sauce into a blender and puree.  If you have a rickety blender you may want to do this in two batches.
  4. Empty blender into a large mixing bowl.  Add rest of wing sauce and eggs, stir.  Add bread crumbs, stir.  Add cheese and fork to combine.
  5. Using your hands, form 12 patties out of the bean mixture.
  6. Put patties on prepared sheet and bake for 20minutes, it is not necessary to flip them during baking.

I ate mine with the sad remains of our ketchup (that’s a small plate).

Man they were good!  I don’t want to toot my own horn, but this was such a good idea!  They were also very filling, I ended up only eating 2.5.

You what what else is a good idea?  The big bowl of popcorn I’m about to make!  Yes, I used up the big bag of ‘corn my in-laws brought me just last month!

What makes you feel old?  I’m 24, I’m not cool with the idea of support hose!  Teenage entertainment makes me feel old too, shows like “Gossip Girl” just make me uncomfortable!

Burst Your Bubble

I was losing my motivation after the last post – I was hungry and distracted and I could feel myself spacing out.  However, my test is this Friday so I distracted myself with a piece of gum and buckled down.

I chipped away at the reading I’m behind on and have almost finished all of my notecards for the material on the test.

Lunch was another taco salad, I’m still not sick of these!  I would like to say I put the bowl beside my work and took ladylike bites, but that happened for all of 30seconds before the shoveling began 🙂

What is your favorite flavor of gum?  I was actually going to cry when I found out that Cherry Coke Bubblicious had been discontinued!  In general I don’t chew a lot of gum (Trident White once every few months) but in high school I chomped constantly!

No, no, no; I hate JT!  Although I did eat at his restaurant in nyc once…..  I meant justin time, as in I got my flu shot just in time because it is frickin’ freezing!

There were lots of little bumps this morning, but the important things ran smoothly.  Apparently I do Not like green Rockstars, I took 4sips before I decided it was inedible unquaffable.  Then it was so cold outside I had to come back in for a hoodie which threw me off schedule.  And when I stopped at the bank on the way home I got frozen out of my account and fixing the issue was annoying and slow.  However, I had a good quickie workout – 25minutes on the treadmill for 2.4miles and 250calories – and I have my flu shot for this season!

Before my shower I rescheduled my doctor’s appointment and made some other business calls; my must do to-do’s for the day are all done!  Which is good, because after my shower I wasted a ton of time sitting on the couch warming up.  Finally, however, the thought of lunch prompted me to get dressed.

I’ve been drooling over these chips on blogs for months so I was so excited when I received free sample coupons in the mail!  My grocery store didn’t have the flavors I was looking for (Buffalo!), but Lime sounded good.  It was tasty, but I’m going to keep looking for the spice.

Alongside I had another sample, a small glass of Kiwi POM juice.

I’m going to Hulu “Mercy” while I eat, so I’ve got to skedaddle before it gets cold.  See you after class!

Huevos Rancheros

Skipping dinner last night left me ravenous this morning!  I knew I needed to remedy that with a big plate of stick-to-your-ribs food.

It was like Huevos Rancheros, but better!

  1. Chop 2 maple chicken apple sausages, heat in a skillet.
  2. Add 1T SmartBalance Light and 1/2black beans, season with salt and pepper.
  3. Meanwhile, stir together 2eggs with a splash of skim milk and a sprinkle chili powder.
  4. Add eggs to skillet and cook through.
  5. At the last minute, add 2oz chopped cheddar.
  6. Remove from pan and top with 2dashes Chipotle Tabasco and 1-2T salsa.

‘Twas good!

The reason I am up so early (for me) is because today is busy busy.  I have a doctors appointment at 9:30 (to deal with my ridiculous foot worts that are still there!!!) and then I have my first lab today!  It is supposed to run from 5-8:50 but we are taking a safety test, not doing a lab experiment, so I hope we get out early.  The doctor’s office is near campus so I’m going to go straight to school from there, it will be a loooong day.  I’m going to buy lunch at school and I packed a snack.  Have a great day!

What is your favorite way to eat eggs?  I adore sunny side up with bread for dipping, but lately I’ve been all about salsa on everything.

Bulimic Taco

My class went well and I got all of my campus to-do’s completed.  My San Fransisco trip is causing me to miss a test so I have to complete some forms to be able to get a make-up date.  When I was looking at my day planner I realized that that trip is actually the weekend right after I am flying to Ohio for my grandma’s birthday; it’s going to be a busy fall!

Adam called me on the way home to say he was out of printer ink so I pushed baking back until tomorrow and picked him up to go to Target.  I had been pretty excited about my sweet endeavor so he really didn’t have to twist my arm to get me to agree to Anderson’s.

I got a chocolate and cookie dough Arctic Swirl.  I’ve been obsessed with cookie dough lately, I don’t know what it is!  This hit the spot, I loved how custardy the soft-serve was.  Plus I liked that the sizing was slightly more reasonable than some other places.

I ate about 3/4 of this.

When I got home I need a speedy meal so I thought of salad.  The resulting bowl is what would happen if a taco threw up 🙂

  • 2 shakes Chipotle Tabasco
  • 3T medium, chunky salsa

It was shockingly good, I’m pretty sure I’ll be making this again soon.

As soon as I shower it will be time for bed.  I’m hoping to really dig into studying tomorrow, so I’m going to head to a coffee shop in the morning.  I’ll post at lunch time.  Sweet dreams.

Mexican food is often the same thing in a different package, what’s your favorite?  I don’t really like tacos, but I loved this taco salad!  My favorite is usually burritos or nachos 🙂
