I’m challenging myself to eat a more healthy diet this month. You can check this post for more information, but essentially I am turning to the USDA’s food pyramid for inspiration. This week’s goal is to hit or surpass the daily recommended allowance of veggies.

Since I’m a woman in my 20s my goal will be to eat at least 2.5 cups of veggies each day this week. The pyramid divides the veggie requirement into 4 subgroups – dark green vegetables, orange vegetables, dry beans and peas, and starchy vegetables – I’ll try to spread my consumption across all four groups.

The website has good tips for including mores servings into your diet. Just like last week with fruit, I’ll being give my own ideas for squeezing in vegetables as well.

I think I’m going to join you on the veggie challenge this week! I do like vegetables, but I definitely don’t eat enough daily (or weekly…or ever, sad). Though I’m looking in my lunchbox and don’t see any green foods, guess I better start thinking up dinner!
My problem is that veggies get redundant really quickly, and that I seem to prefer raw veggies over cooked! Maybe I’d better start looking up some recipes! (maybe something like the Wegmans garlic eggplant!)
Yay, glad you are joining me! I don’t see anything wrong with eating a bunch of raw veggies, but I agree that if you try some new recipes you’ll probably find something you love. I didn’t even think about making the eggplant at home, but I think Wegmans does post all of their recipes! You should also try the nut-butter parsnip fries from my lunch post, holy yum!
it can be hard at first to add veggies into a diet.. but once u find the best way to enjoy them its so easy and tastes great too! good luck<3
