Carrot Salad

This salad is quick and easy and similar to cole slaw.

Carrot Salad  makes 4 1/2C servings at about 120calories a piece

  • 2C shredded carrots
  • 6oz plain nonfat yogurt
  • 1/4C walnuts
  • 1/2C raisins
  • dash of nutmeg

Mix ingredients to combine.  This is best when let to sit overnight but can be eaten right away.
