Very Veggie Spaghetti

This simply dish is easy to make and you can substitute in any veggies depending on the season and your tastes.  Makes 4 servings; each serving contains 1.5cups of vegetables.

  • 8oz thin ww spaghetti
  • 2cups chopped baby bella mushrooms
  • 2cups mini tomatoes
  • 2.5cups chopped broccoli
  • extra virgin olive oil
  • salt
  1. Preheat the oven to 375*.  Line two baking sheets with tinfoil and spritz with evoo.
  2. Place veggies on the sheets, spritz with evoo, sprinkle with salt and bake for 30minutes.
  3. Meanwhile, prepare pasta according to box directions.
  4. Return cooked pasta to the pot and add in the cooked veggies.  Stir well, being sure to crush the tomatoes.
  5. Plate, and top each serving with a small drizzle of evoo.
