This simply dish is easy to make and you can substitute in any veggies depending on the season and your tastes. Makes 4 servings; each serving contains 1.5cups of vegetables.
- 8oz thin ww spaghetti
- 2cups chopped baby bella mushrooms
- 2cups mini tomatoes
- 2.5cups chopped broccoli
- extra virgin olive oil
- salt
- Preheat the oven to 375*. Line two baking sheets with tinfoil and spritz with evoo.
- Place veggies on the sheets, spritz with evoo, sprinkle with salt and bake for 30minutes.
- Meanwhile, prepare pasta according to box directions.
- Return cooked pasta to the pot and add in the cooked veggies. Stir well, being sure to crush the tomatoes.
- Plate, and top each serving with a small drizzle of evoo.
