Shallotta Salmon Burgers

These burgers are super tasty; the egg and miracle whip hold them together just fine and the lack of bread crumbs really lets the salmon flavor shine through.  They provide healthy fats and have ~200calories per burger.

  • 1 T evoo
  • 4 medium shallots, chopped
  • 24 ounces skinless boneless salmon
  • 1/4 cup lite miracle whip
  • 3 eggs
  1. Preheat the oven to 400*.  Line two baking sheets with foil and baking spray.
  2. Heat the oil in a skillet over medium heat.  Add the shallots and cook until browned, stirring occasionally.  Season with salt and pepper.
  3. Combine salmon, miracle whip, eggs, and cooked shallots in a large bowl.  Mash together with a fork until completely combined.’
  4. Form burger mixture into 6 patties and place on the prepared baking sheets.
  5. Cook for 20minutes, flipping at the halfway point.
