Feta, Tofu, Tomato, Zucchini, Quinoa

Feta, Tofu, Tomato, Zucchini, Quinoa, serves 6

  • 1pint cherry tomatoes
  • 2zucchinis, sliced
  • 24oz (2packages) extra firm tofu, drained and pressed
  • 12oz quinoa
  • 4oz feta
  1. Prepare quinoa according to the box directions.
  2. Meanwhile, place tofu and veggies on a sprayed and foiled baking sheet and sprinkle with salt and seasoning of choice.  Put trays in an oven for 30minutes.
  3. Combine all ingredients, sprinkle with feta, and loudly “Mmmmmmmmmn!”
