Feta, Tofu, Tomato, Zucchini, Quinoa, serves 6
- 1pint cherry tomatoes
- 2zucchinis, sliced
- 24oz (2packages) extra firm tofu, drained and pressed
- 12oz quinoa
- 4oz feta
- Prepare quinoa according to the box directions.
- Meanwhile, place tofu and veggies on a sprayed and foiled baking sheet and sprinkle with salt and seasoning of choice. Put trays in an oven for 30minutes.
- Combine all ingredients, sprinkle with feta, and loudly “Mmmmmmmmmn!”
