My mother told me that when she was a young girl they would pour salted, roasted peanuts into glass bottles of Coke. This sounds a little strange, but upon some Googling I discovered that this was a common treat in the South. I decided to flip the idea a bit and turn it into a sundae. Serves 2.
- 1 and 1/2 cups vanilla bean ice cream
- 4 Tbsp salted, roasted peanuts
- 2 cups Coke
- Pour Coke into a small saucepan and bring to a rolling boil. Simmer until the liquid has reduced to 1/3 the original volume. Remove syrup from saucepan and allow to cool to room temperature (you can place it in the fridge to cool more quickly).
- Divide ice cream into two bowls. Top evenly with Coke syrup and peanuts.
