Southern Coke Sundae

My mother told me that when she was a young girl they would pour salted, roasted peanuts into glass bottles of Coke.  This sounds a little strange, but upon some Googling I discovered that this was a common treat in the South.  I decided to flip the idea a bit and turn it into a sundae.  Serves 2.

  • 1 and 1/2 cups vanilla bean ice cream
  • 4 Tbsp salted, roasted peanuts
  • 2 cups Coke
  1. Pour Coke into a small saucepan and bring to a rolling boil.  Simmer until the liquid has reduced to 1/3 the original volume.  Remove syrup from saucepan and allow to cool to room temperature (you can place it in the fridge to cool more quickly).
  2. Divide ice cream into two bowls.  Top evenly with Coke syrup and peanuts.
