Vanilla French Toast

This recipe serves 1, but can easily be modified for a larger crowd.

  • 2slices ww bread
  • 1T butter/substitute
  • (optional) maple syrup and chopped fruit
  • 1egg
  • 1/2C skim milk
  • shake nutmeg
  • shake cinnamon
  • 1T vanilla
  1. Place everything but 1st 3 ingredients in a shallow bowl and stir to combine.
  2. Add bread and let soak, at least 4minutes.  Flip once or twice to distribute evenly; you should let it sit until all of the liquid has been absorbed.
  3. Heat pan over medium high heat and add butter.  Melt and swirl to coat pan.
  4. Add bread slices 1 by 1, being careful not to overlap.  Let cook until golden, about 3minutes on each side.
  5. Plate and serve with fruit and syrup.
